Vegan Pesto, Hummus And Avocado Sandwich

Vegan Pesto, Hummus and Avocado Sandwich - To make this vegan sandwich, I have combined three of my favourite ingredients: vegan pesto, hummus and avocado. It is of scandal!
Vegan sandwiches or sandwiches are straightforward to prepare.

Pesto, hummus and avocado are three of my favourite ingredients, that's why I came up with mixing them to make a sandwich, and it's a shame I haven't done it before because it's spectacular.

If you don't want to complicate your life, you can eliminate the pesto and add a little nutritional yeast and garlic powder to the hummus to give it an interesting touch.

Vegan Pesto, Hummus and Avocado Sandwich
I have combined three of my favourite ingredients to make this vegan sandwich: vegan pesto, hummus, and avocado. It is of scandal!

Ingredients SCALE (1x)

For the pesto (1x):

  • One clove garlic
  • 1/4 cup of walnuts (30 g)
  • Four tablespoons nutritional or beer yeast
  • Two handfuls of fresh basil (30 g)
  • 1/4 teaspoon sea salt
  • Ground black pepper to taste
  • 5–6 tablespoons of extra virgin olive oil

For the sandwich (1x):

  • Two slices of bread
  • 1–2 tablespoons pesto
  • 1–2 tablespoons hummus
  • Lettuce leaves
  • Avocado
  • Tomato slices

Ingredients SCALE (2x)

For the pesto (2x):

  • Two cloves of garlic
  • 1/2 cup of walnuts (60 g)
  • Eight tablespoons nutritional or beer yeast
  • Four handfuls of fresh basil (60 g)
  • 1/2 teaspoon of sea salt
  • Ground black pepper to taste
  • 10–12 tablespoons extra virgin olive oil

For the sandwich (2x):

  • Four slices of bread
  • 2–4 tablespoons pesto
  • 2–4 tablespoons hummus
  • Lettuce leaves
  • Avocado
  • Tomato slices

Ingredients SCALE (3x)

For the pesto (3x):

  • Three cloves of garlic
  • 3/4 cup walnuts (90 g)
  • 12 tablespoons nutritional or beer yeast
  • Six handfuls of fresh basil (90 g)
  • 3/4 teaspoon sea salt
  • Ground black pepper to taste
  • 15–18 tablespoons extra virgin olive oil

For the sandwich (3x):

  • Six slices of bread
  • 3–6 tablespoons pesto
  • 3–6 tablespoons hummus
  • Lettuce leaves
  • Avocado
  • Tomato slices

Instructions

  1. First, we are going to prepare the vegan pesto. Put the garlic, walnuts, nutritional or beer yeast, basil, salt, pepper and oil in a food processor or blender. We beat until all the ingredients are well integrated.
  2. We are not going to use all the pesto, so you can make less if you want.
  3. We spread pesto on one of the buns and hummus on the other.
  4. We place some lettuce leaves, avocado and some tomato slices on top. You can add salt and pepper if you want.
  5. And our sandwich is ready! You can add any ingredient you like; the good thing about sandwiches is that they always look good.
