Rhubarb Jam Sandwich Recipe

Rhubarb Jelly Sandwich: This is the upgraded version of the traditional peanut butter and jelly sandwich. It is made with homemade rhubarb jam and banana.

We could not leave Cologne without trying rhubarb, we had seen it in many American blogs, and we were always curious, but we had never found it in Spain, so when we saw it in the supermarket, we could not resist, and the truth is that we liked it.

Be careful if you buy peanut butter because many are made with hydrogenated oils and ingredients that are not healthy.

Tips:

  • If you don't want to waste time, you can add the banana without cooking.
  • You can use any other jam or nut butter (almond is one of my favourites).
  • Rhubarb can be challenging to find, and it is not always in season, but if you want to make homemade jam, you can substitute it with strawberries or any other red fruit.

Ingredients SCALE (1x)

  • One banana
  • Four slices of sliced ​​bread
  • Peanut butter to taste
  • Rhubarb jam to taste

For the rhubarb jam (1x):

  • 2 cups of chopped rhubarb (240 g)
  • 1 cup of chopped strawberries (150 g)
  • The juice of half a lemon
  • 1/4 cup of water (65 ml)
  • Eight tablespoons of brown sugar

Ingredients SCALE (2x)

  • Two banana
  • Eight slices of sliced bread
  • Peanut butter to taste
  • Rhubarb jam to taste

For the rhubarb jam (2x):

  • 4 cups of chopped rhubarb (480 g)
  • 2 cups of chopped strawberries (300 g)
  • The juice of half a lemon
  • 1/2 cup of water (130 ml)
  • 16 tablespoons of brown sugar

Ingredients SCALE (3x)

  • Three banana
  • 12 slices of sliced bread
  • Peanut butter to taste
  • Rhubarb jam to taste

For the rhubarb jam (3x):

  • 6 cups of chopped rhubarb (720 g)
  • 3 cup of chopped strawberries (450 g)
  • The juice of half a lemon
  • 3/4 cup of water (195 ml)
  • 24 tablespoons of brown sugar

Instructions

  1. Cut the banana into four pieces.
  2. Pour a little water in a non-stick pan, and when it is hot, add the banana. Brown it on both sides until caramelised. Add more water if necessary and be careful not to stick.
  3. Toast the bread slices in a skillet or toaster.
  4. Add peanut butter to one of the slices, rhubarb jelly, two banana pieces, and place the other slice on top.

For the rhubarb jam:

  1. Chop the rhubarb and strawberries and add them to a saucepan with the rest of the ingredients. Cook over medium-high heat for about 25 minutes or until the jam is set.
  2. In the end, mash it with a fork so that the rhubarb and strawberries disintegrate.
  3. Ideally, let it cool before making the sandwich, so it will be richer and have a thicker consistency.
