I love it, but I don't usually use it in blog recipes because it can be challenging to find in Spain, and it is less economical than other vegetables. 

The only formula on the blog with kale (also known as kale) is this green smoothie.

If you can't find it, don't worry, you can use any other green leafy vegetable (spinach, chard, lettuce, etc.).

Kale is a very tough vegetable; that's why I permanently remove the central stem and take advantage of only the leaves; in addition, you have to massage it to soften it a bit, it may sound strange, but it is not.

Ingredients SCALE (1x)

  • Four sprigs of kale (about four handfuls)
  • 1/4 cup of red pepper (40 g)
  • 1/4 cup of carrot (30 g)
  • 1/4 cup mango (40 g)
  • 1/4 cup of red cabbage (20 g)
  • 1/4 cup of blueberries (40 g)
  • Sesame seeds for garnish

For the dressing (1x):

  • One avocado
  • Two tablespoons of water
  • One tablespoon soy sauce
  • The juice of half a lemon

Ingredients SCALE (2x)

  • Eight sprigs of kale (about eight handfuls)
  • 1/2 cup of red pepper (80 g)
  • 1/2 cup of carrot (60 g)
  • 1/2 cup of mango (80 g)
  • 1/2 cup of red cabbage (40 g)
  • 1/2 cup of blueberries (80 g)
  • Sesame seeds for garnish

For the dressing (2x):

  • Two avocado
  • Four tablespoons of water
  • Two tablespoon soy sauce
  • The juice of half a lemon

Ingredients SCALE (3x)

  • 12 sprigs of kale (about 12 handfuls)
  • 3/4 cup of red bell pepper (120 g)
  • 3/4 cup of carrot (90 g)
  • 3/4 cup mango (120 g)
  • 3/4 cup of red cabbage (60 g)
  • 3/4 cup of blueberries (120 g)
  • Sesame seeds for garnish

For the dressing (3x):

  • Three avocado
  • Six tablespoons of water
  • Three tablespoon soy sauce
  • The juice of half a lemon

Instructions

  1. Remove the stem or the most challenging part from the kale branches and chop it up with your hands.
  2. Put all the ingredients of the dressing in a glass or hand mixer and beat until they are perfectly integrated. If you want, you can mash the avocado with a fork, add the rest of the ingredients and stir, although it will not be so creamy.
  3. Put the kale in a large plate or container, add the dressing and massage with your hands for at least 2 or 3 minutes; you will see that it softens.
  4. Chop the rest of the ingredients, add them to the salad and stir.
  5. Add sesame seeds on top for garnish, and you have the salad ready to serve.

Grades

  • If you don't want to complicate your life, you can use any other dressing such as a vinaigrette.
  • Use your favourite ingredients; you don't have to use the same ones as me.
  • Instead of kale or kale, you can use any green leafy vegetable.
