I love quinoa, and for a few weeks, I have been eating it at least once or twice a week, especially for dinner with a delicious salad.

Tips:

  • If you want the tofu to be more crunchy, you can bake it separately or grill it and add it last.
  • If you do not like tofu or prefer not to consume soy, you can eliminate it or replace it with other vegetables or vegetable meats.
  • You can substitute any ingredient for another (vegetables, dressing, pine nuts, pomegranate, etc.).
  • You can cook this dish with some time if you want to prepare many recipes for lunch or dinner that day and hit it in the oven at the last minute, although in that case, add the pomegranate just before serving.
  • Baking time may vary depending on your oven.

Ingredients SCALE (1x)

  • 150g Brussels sprouts, cut in half
  • 150 g pumpkin, diced large
  • 150 g firm tofu, cut into large cubes
  • Four tablespoons pine nuts
  • Pomegranate to taste

For the dressing (1x):

  • One tablespoon maple syrup
  • One tablespoon apple cider vinegar
  • One tablespoon of extra virgin olive oil
  • One tablespoon soy sauce or tamari
  • One teaspoon cornstarch

For the quinoa (1x):

  • 1/2 cup of quinoa (85 g)
  • 1 cup of water (250 ml)
  • One tablespoon soy sauce

Ingredients SCALE (2x)

  • 300g Brussels sprouts, cut in half
  • 300 g pumpkin, diced large
  • 300g firm tofu, roughly diced
  • Eight tablespoons pine nuts
  • Pomegranate to taste

For the dressing (2x):

  • Two tablespoon maple syrup
  • Two tablespoon apple cider vinegar
  • Two tablespoons of extra virgin olive oil
  • Two tablespoon soy sauce or tamari
  • Two teaspoon cornstarch

For the quinoa (2x):

  • 1 cup of quinoa (170 g)
  • 2 cups of water (500 ml)
  • Two tablespoon soy sauce

Ingredients SCALE (3x)

  • 450g Brussels sprouts, cut in half
  • 450 g pumpkin, diced large
  • 450g firm tofu, roughly diced
  • 12 tablespoons pine nuts
  • Pomegranate to taste

For the dressing (3x):

  • Three tablespoon maple syrup
  • Three tablespoon apple cider vinegar
  • Three tablespoons extra virgin olive oil
  • Three tablespoon soy sauce or tamari
  • Three teaspoon cornstarch

For the quinoa (3x):

  • 1 1/2 cup of quinoa (255 g)
  • 3 cups of water (750 ml)
  • Three tablespoon soy sauce

Instructions

  1. Preheat the oven to 180ºC or 355ºF.
  2. Place the sprouts, squash, and tofu on a cookie sheet.
  3. In a glass or bowl, mix all the dressing ingredients and add it to the vegetables; stir and bake for 45 minutes. Every 15 minutes, open the oven and stir so that the sauce does not stay down. When you have the last 15 minutes, add the pine nuts.
  4. Meanwhile, you can cook the quinoa by following the instructions in the entry we made on how to cook quinoa. Reservation.
  5. When the vegetables are ready, add the quinoa and the pomegranate, stir, and if you want, you can add a drizzle of oil or lemon juice, although it is not necessary.
