Some time ago, I saw on several American blogs some mini zucchini pizzas with cheese and tomato that I found very original. 

We have made our version, and we have come up with these mini vegan zucchini pizzas with Parmesan cheese and pesto, both vegan and homemade.

To make the mini pizzas, you have to cut the zucchini into slices and brown it in a pan or skillet, spread the pesto and sprinkle the cheese.

You can also cook the zucchini slices in the oven, but it is not worth it because you have to spend more heat, and you can cook them on the grill or in a non-stick pan with a drizzle of oil or even without anything.

  1. Cut the zucchini into slices (we made about 20).
  2. Brown the slices in a frying pan with oil or on the grill.
  3. Spread pesto (one teaspoon) and sprinkle Parmesan (1/8 teaspoon) on each slice of zucchini.
