This recipe is ideal for those days when we don't feel like cooking, we are short on time or exhausted. 

It's a healthy alternative to convenience foods, and you only need 15 minutes to prepare these delicious vegan tacos.

Legumes are a very complete and healthy food; they are delicious and easy to prepare, so I often include them in my diet. 

The ideal is to cook the legumes; you can make several servings at a time and eat them throughout the week.

Another option is to use canned legumes, although they usually have preservatives and additives, so I recommend that you read the list of ingredients and try to choose the healthiest option you can find.

You can add any fresh, cooked vegetables, your favourite sauce, or any other ingredient you can think of.

To keep the recipe simple and have few ingredients, I made the tacos with avocado, corn and cherry tomatoes. 

Still, they also have to be very rich in onion, cilantro, pico de gallo, guacamole or vegan sour cream.

Another option is to make burritos using tortillas instead of the great corn tortillas to make tacos; they are lighter and just as delicious.

Ingredients SCALE (1x)

  • 2 cups of cooked beans (400 g)
  • 1 cup of tomato sauce (250 g)
  • Two teaspoons hot sauce or Tabasco
  • Two teaspoons ground cumin
  • One avocado
  • Eight cherry tomatoes
  • 1/4 cup of corn (35 g)
  • Eight special corn tortillas for tacos

Ingredients SCALE (2x)

  • 4 cups of cooked beans (800 g)
  • 2 cup of tomato sauce (500 g)
  • Four teaspoons hot sauce or Tabasco
  • Four teaspoons ground cumin
  • Two avocado
  • 16 cherry tomatoes
  • 1/2 cup of corn (70 g)
  • 16 special corn tortillas for tacos

Ingredients SCALE (3x)

  • 6 cups of cooked beans (1200 g)
  • 3 cup of tomato sauce (750 g)
  • Six teaspoons hot sauce or Tabasco
  • Six teaspoons ground cumin
  • Three avocado
  • 24 cherry tomatoes
  • 3/4 cup corn (105 g)
  • 24 special corn tortillas for tacos

Instructions

  1. Add the beans, tomato sauce, hot sauce, and cumin to a skillet. Heat over medium-high heat.
  2. Chop the avocado and cherry tomatoes.
  3. Divide the taco filling (beans with tomato sauce, avocado, tomatoes and corn) among the tortillas and serve immediately.
