Easy Vegan Pesto Recipe

Vegan pesto, a delicious Italian sauce in a 100% vegetable version. It is prepared in less than 5 minutes with nutritional or beer yeast instead of cheese.

Vegan pesto is one of those sauces that goes with everything: with pasta, with potatoes, rice, with bread, with vegetables, with legumes, it always looks great!

The main ingredients are extra virgin olive oil, fresh basil, pine nuts, garlic, salt and Parmesan cheese.

I have used nutritional or beer yeast to make a vegan version, but our vegan parmesan cheese is also delicious.

Some versions include other ingredients. 

I like to add ground black pepper and lemon juice.

I have also seen that people add lemon zest to it, although I prefer to save myself the effort because it is perfect that way.

I had always prepared the pesto in a food processor or in a blender (the traditional version as I understand it was made in a mortar), but I discovered that you could put all the ingredients in a bowl and mix them with them a mixer. 

Hand, I always do it this way because it is easier to clean and very comfortable.

Ingredients SCALE (1x)

  • 1 cup fresh basil leaves (20 g or 0.7 oz), stem removed
  • Four tablespoons of extra virgin olive oil
  • Two tablespoons nutritional or beer yeast
  • Two tablespoons pine nuts (raw or toasted)
  • One teaspoon lemon juice (optional)
  • One clove garlic
  • a pinch of salt
  • A pinch of ground black pepper

Ingredients SCALE (2x)

  • 2 cups fresh basil leaves (40 g or 0.14 oz), stem removed
  • Eight tablespoons of extra virgin olive oil
  • Four tablespoons nutritional or beer yeast
  • Four tablespoons pine nuts (raw or toasted)
  • Two teaspoon lemon juice (optional)
  • Two cloves of garlic
  • a pinch of salt
  • A pinch of ground black pepper

Ingredients SCALE (3x)

  • 3 cups fresh basil leaves (60 g or 0.21 oz), stem removed
  • 12 tablespoons of extra virgin olive oil
  • Six tablespoons nutritional or beer yeast
  • Six tablespoons pine nuts (raw or toasted)
  • Three teaspoon lemon juice (optional)
  • Three cloves of garlic
  • a pinch of salt
  • A pinch of ground black pepper

Instructions

  1. Pour all the ingredients into a bowl and beat with the help of a hand mixer until you get a paste. You can also blend them in a food processor or blender.
  2. Serve immediately or refrigerate in an airtight container for 5-7 days. Pesto can be taken with bread, pasta, rice, potatoes, etc.

Notes

  • Basil could be substituted for spinach and pine nuts for walnuts or any other dried fruit.
  • You don't need to toast the pine nuts (I don't toast them), although pesto with toasted pine nuts has more flavour.
  • Nutritional or beer yeast could be substituted for vegan Parmesan cheese. In that case, it is not necessary to add salt.
  • Lemon juice is not essential, but it gives it a vibrant flavour. Some also add a little lemon zest.
