This is the last Christmas recipe that we have made, and although we would have liked to have published it earlier, it has not been possible.

Tips:

  • You can use any other dried fruit instead of almonds. If you can't eat nuts, substitute almond flour for more oatmeal or buckwheat flour. You may have to adjust the amounts as they are not the same ingredient; if the dough is very soft, add more flour and if it is very hard, add some liquid such as oil, water or a little of your favourite vegetable milk.
  • You don't have to use the same oil and sweetener as us, but choose unrefined options because they are more nutritious and healthier.

Ingredients SCALE (1x)

  • 3/4 cup of ground almonds (120 g)
  • 1 and 3/4 cups of buckwheat flour (240 g)
  • 3/4 cup of gluten-free oatmeal (90 g)
  • 4 tablespoons unsweetened cocoa powder
  • 1 cup of extra virgin olive oil (220 g)
  • 1/2 cup of coconut sugar (130 g)
  • 1/2 cup of maple syrup (160 g)
  • Sesame seeds for garnish

Ingredients SCALE (2x)

  • 1 1/2 cup of ground almonds (240 g)
  • 2 3/4 cups of buckwheat flour (480 g)
  • 1 1/2 cup of gluten-free oatmeal (180 g)
  • 8 tablespoons unsweetened cocoa powder
  • 2 cups of extra virgin olive oil (440 g)
  • 1 cup of coconut sugar (260 g)
  • 1 cup of maple syrup (320 g)
  • Sesame seeds for garnish

Ingredients SCALE (3x)

  • 2 1/4 cup of ground almonds (360 g)
  • 3 and 3/4 cups of buckwheat flour (720 g)
  • 2 1/4 cup gluten-free oatmeal (270 g)
  • 12 tablespoons unsweetened cocoa powder
  • 3 cup of extra virgin olive oil (660 g)
  • 1 1/2 cup of coconut sugar (390 g)
  • 1 1/2 cup of maple syrup (480 g)
  • Sesame seeds for garnish

Instructions

  1. Preheat the oven to 180ºC or 355ºF.
  2. Blend the almonds in a food processor.
  3. Add the rest of the ingredients (except the sesame seeds) and blend until you get a homogeneous dough.
  4. Form balls with your hands and squish them to give them the shape of a polvorón. Top with sesame seeds for garnish.
  5. Place the polvorones on a baking sheet lined with parchment paper and bake for about 30 minutes or until golden brown.
