There are many different ways to make vegan cheese, so I am experimenting and trying other options. 

For now, I have to admit that vegan cheese made from potatoes is my favourite, but the good thing about this recipe for vegan fat-free mac and cheese is that it is much lighter since it has no oil or nuts.

This time I used cauliflower to give the sauce more body, and it is delicious. 

If you are on a diet, you have to try this cheese, and if not, too!

You can use it to make pizzas, as a dip to dip nachos, or in any other way, you can imagine.

It has that beautiful colour from the turmeric, although I recommend that you be careful because it gives it too much flavour if you add too much. 

If you don't like the way it tastes, don't toss it on, it will be paler in colour but just as rich.

The hardest thing for me to give up when I became vegan was cheese because it was one of my favourite foods, and I ate it every day.

Many vegetarians do not dare to go vegan precisely because of the cheese. 

Still, today there are many homemade vegan substitutes, and you can even find packaged cheeses in some stores. 

Cheese and dairy, in general, are not healthy food, they cause many health problems, and unlike what many people believe, it is one of the cruellest food industries. 

Therefore, I encourage you to try other alternatives if you are not vegan, for your health, for the environment and the animals.

Fat-free vegan cheese sauce
If you are celiac or do not take gluten, use nutritional yeast instead of brewer's yeast

Another option if you can't find either is to use beer (with or without gluten) instead of water to give it a cheese flavour.

If your mixer is not as powerful as mine, the texture of your cheese may be lumpier; in that case, add a little more water to make it easier to beat. 

You can also add other spices that you like or give it a spicy touch with a bit of chilli or chilli.

To make this macaroni even more prosperous, you can add a little vegan Parmesan cheese on top, although keep in mind that it has fat because it is made with cashews. 

You can also substitute some of the water for oil to make the sauce creamier, but I like it that way, it's delicious, and it's a very light and healthy dish

Ingredients SCALE (1x)

  • 240 g gluten-free pasta (8.5 ounces)
  • 2 and 1/2 cups of cauliflower (450 g)
  • 1/2 cup of water (125 ml)
  • Two teaspoons garlic powder
  • Two teaspoons onion powder
  • 1/4 cup nutritional yeast or brewer's yeast (16 g)
  • One tablespoon of lemon juice
  • Two tablespoons soy sauce
  • 1/4 teaspoon turmeric

Ingredients SCALE (2x)

  • 480 g of gluten-free pasta (17 ounces)
  • 4 and 1/2 cups of cauliflower (900 g)
  • 1 cup of water (250 ml)
  • Four teaspoons garlic powder
  • Four teaspoons onion powder
  • 1/2 cup of nutritional yeast or brewer's yeast (32 g)
  • Two tablespoons lemon juice
  • Four tablespoons soy sauce
  • 1/2 teaspoon turmeric

Ingredients SCALE (3x)

  • 720 g gluten-free pasta (25 1/2 ounces)
  • 6 and 1/2 cups of cauliflower (1350 g)
  • 1 1/2 cups of water (375 ml)
  • Six teaspoons garlic powder
  • Six teaspoons onion powder
  • 3/4 cup nutritional yeast or brewer's yeast (48 g)
  • Three tablespoon lemon juice
  • Six tablespoons soy sauce
  • 3/4 teaspoon turmeric


  1. Cook the pasta according to the instructions on the package.
  2. Meanwhile, steam the cauliflower or in plenty of boiling water until tender (about 10-15 minutes).
  3. Add the cauliflower to a blender with the rest of the ingredients and beat until they are perfectly integrated. Add salt if it seems bland.
  4. Mix the pasta with the sauce in a pot or skillet or directly on the plate.
