Easy Vegan Eggnog Recipe

  • You can use another non-dairy milk, although I like coconut milk for this recipe because it is creamier.
  • If you don't like cashews or can't find them, add more coconut milk or any other soaked dried fruit.
  • You can use the sweetener you like the most or the one you have at home, add it little by little until the punch is to your liking.

Ingredients SCALE (1x)

  • One can of coconut milk (400 ml)
  • 1/2 cup of raw cashews (65 g)
  • 1/4 cup of water (65 ml)
  • Three tablespoons maple syrup
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon

Ingredients SCALE (2x)

  • Two can of coconut milk (800 ml)
  • 1 cup of raw cashews (130 g)
  • 1/2 cup of water (130 ml)
  • Six tablespoons maple syrup
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon

Ingredients SCALE (3x)

  • Three can of coconut milk (1200 ml)
  • 1 1/2 cup raw cashews (195 g)
  • 3/4 cup of water (195 ml)
  • Nine tablespoons maple syrup
  • 3/4 teaspoon ground nutmeg
  • 3/4 teaspoon ground cinnamon

Instructions

  1. Let the cashews soak overnight or for at least 1 hour. This step is not essential, although the punch will have a better texture because the cashews will be easier to beat.
  2. Put all the ingredients in a blender and beat until you get the desired consistency.
  3. You can take it directly although it is richer cold.
