Ingredients SCALE (1x)

  • Two handfuls of escarole
  • Four handfuls of lettuce (I used lollo rosso)
  • 1/2 pomegranate
  • One red apple
  • Two tangerines
  • 1/2 red onion
  • Eight walnuts
  • 1/2 cup of pumpkin seeds (60 g)

Dressing (1x):

  • Four tablespoons orange juice
  • One tablespoon soy sauce or tamari
  • One tablespoon maple syrup
  • One tablespoon apple cider vinegar
  • Four tablespoons of brewer's yeast or nutritional yeast

Ingredients SCALE (2x)

  • Four handfuls of escarole
  • Eight handfuls of lettuce (I used lollo rosso)
  • One pomegranate
  • Two red apple
  • Four tangerines
  • One red onion
  • 16 walnuts
  • 1 cup of pumpkin seeds (120 g)

Dressing (2x):

  • Eight tablespoons orange juice
  • Two tablespoon soy sauce or tamari
  • Two tablespoon maple syrup
  • Two tablespoon apple cider vinegar
  • Eight tablespoons of brewer's yeast or nutritional yeast

Ingredients SCALE (3x)

  • Six handfuls of escarole
  • 12 handfuls of lettuce (I used lollo rosso)
  • 1 1/2 pomegranate
  • Three red apple
  • Six tangerines
  • 1 1/2 red onion
  • 24 walnuts
  • 1 1/2 cup of pumpkin seeds (180 g)

Dressing (3x):

  • 12 tablespoons orange juice
  • Three tablespoon soy sauce or tamari
  • Three tablespoon maple syrup
  • Three tablespoon apple cider vinegar
  • 12 tablespoons brewer's yeast or nutritional yeast

Instructions

  1. Chop all the ingredients to your liking and place them in a bowl.
  2. To make the dressing, you can mix all the ingredients in a cup or bowl, although I prefer to do it in a blender to have a lighter texture.
  3. Dress the salad just before eating, so the lettuce is not mushy.
