Homemade Sweet And Sour Sauce

As I mentioned in our rice entry, three delights, I have been going to Chinese restaurants for as long as I can remember, and spring rolls with sweet and sour sauce are one of the dishes I always order.

This time we bring you the recipe for the sauce, and we have not put it with the rolls because it is also used in many other dishes; Waleed, for example, tends to add three delights to rice (I prefer to take it with soy sauce).

We have tried many sweet and sour sauce brands, and none have convinced us; none resembled the original that we usually have in Chinese restaurants, so we got down to work, and finally, we have found our favourite recipe.

You may have a different taste than ours, so I recommend that you try it on the go. 

If you like it sweeter, you add more sweetener, if you like it sour, you may have to add more vinegar, and if it is solid with the amounts we have used, you can add a little more water.

We use rice vinegar because we like its flavour better, but you cannot substitute it with white wine or apple vinegar

You can also substitute the agave syrup for maple syrup, sugar or another sweetener.

I was born in Pamplona, but I feel Andalusian adoptive, so today, I have given myself a tribute by having bread-like oil for breakfast, as we did at school.

Ingredients SCALE (1x)

  • One tablespoon ketchup or tomato sauce
  • One teaspoon soy sauce
  • Two tablespoons vinegar (better rice)
  • Four tablespoons agave syrup
  • 75 millilitres of water
  • Two teaspoons cornstarch

Ingredients SCALE (2x)

  • Two tablespoons ketchup or tomato sauce
  • Two teaspoon soy sauce
  • Four tablespoons vinegar (best rice)
  • Eight tablespoons agave syrup
  • 150 millilitres of water
  • Four teaspoons cornstarch

Ingredients SCALE (3x)

  • Three tablespoons ketchup or tomato sauce
  • Three teaspoon soy sauce
  • Six tablespoons vinegar (best rice)
  • 12 tablespoons agave syrup
  • 225 millilitres of water
  • Six teaspoons cornstarch


  1. We mix the ketchup or tomato sauce, soy sauce, vinegar, and agave syrup in a bowl.
  2. In the glass, we pour the water and dissolve the cornstarch until it has no lumps. We run this mixture over the other ingredients and stir until they are fully integrated.
  3. In a saucepan, we heat our sauce over high heat until it starts to boil, lower to medium heat and stir until the sauce thickens.
  4. Remove from the heat and let it cool completely.
