Without a doubt, this tahini dressing is my favourite, I am obsessed with it, and I prepare it almost every day.

It is very creamy, it has a very intense flavour, and the best of all is that it is healthy, it has it all!

Packaged dressings are packed with additives and cost so little to make at home that they're not worth buying.

It is the good thing about this dressing, it is ready in about 2 minutes, in fact, in my day-to-day life, I do not even use the mixer, I mix it in a glass, although if you beat it, it will be creamier and it will be more bound.

I have used raw tahini this time, but the roasted one has a more intense flavour; you can use the one you like the most.

If you go for toasted tahini, the dressing will be darker in colour and less bitter.

I don't know how long it can last in the fridge because I always prepare it for the occasion. 

After all, that way, it tastes better, has a better texture and is fresher, but if you make more quantity, I recommend that you keep it in an airtight container (preferably glass) in the fridge.

Ingredients SCALE (1x)

  • Ten romaine lettuce leaves
  • 1/2 red onion
  • One tomato
  • 1 cup of cooked chickpeas (160 g)

For the dressing (1x):

  • Four tablespoons of tahini
  • Four tablespoons of water
  • Four tablespoons lemon juice
  • Four tablespoons of brewer's yeast
  • 1/2 teaspoon of sea salt
  • Black pepper to taste

Ingredients SCALE (2x)

  • 20 romaine lettuce leaves
  • One red onion
  • Two tomato
  • 2 cups of cooked chickpeas (320 g)

For the dressing (2x):

  • Eight tablespoons of tahini
  • Eight tablespoons of water
  • Eight tablespoons lemon juice
  • Eight tablespoons of brewer's yeast
  • One teaspoon of sea salt
  • Black pepper to taste

Ingredients SCALE (3x)

  • 30 romaine lettuce leaves
  • 1 1/2 red onion
  • Three tomato
  • 3 cups cooked chickpeas (480 g)

For the dressing (3x):

  • 12 tablespoons tahini
  • 12 tablespoons of water
  • 12 tablespoons lemon juice
  • 12 tablespoons of brewer's yeast
  • 1 1/2 teaspoon sea salt
  • Black pepper to taste


  1. Chop the vegetables to your liking and put them on a plate or salad bowl.
  2. Add the cooked chickpeas (they must be cold or at room temperature).
  3. Add the dressing and stir so that it integrates nicely.

For the dressing:

  1. Put all the ingredients in a blender and beat until they are perfectly integrated.
  2. If you don't want to complicate your life, you can mix them in a glass with the help of a spoon or fork, although it will not have such a creamy and uniform texture.


  • Add more or less water, depending on how creamy or thick you like the dressing.
  • Instead of brewer's yeast, you can use nutritional yeast. Another option is to substitute beer for water or eliminate this ingredient.
