Roasted Potatoes With Pesto

These pesto roast potatoes seem out of this world; seriously, they're perfect for any celebration and couldn't be easier to make.

Many of the Christmas recipes are prepared in the oven, but we want all the recipes to be suitable for everyone, giving alternatives for those who do not have a range at home. 

You can steam or cook the potatoes (with or without skin) until they are tender, although the cooking time may vary depending on the size of your potatoes

If you don't have a lot of patience, you can chop them to cook beforehand. 

If you want them to be golden brown and crispier, you can sauté them a little in a pan with olive oil after cooking or steaming.

The trick to getting roast potatoes that are crispy on the outside and soft and juicy on the inside is to cook them before putting them in the oven. 

In my day to day life, I do not complicate my life, and I usually cook potatoes in the oven or steamed. 

Still, since it is a special occasion, I have thrown the house out of the window, I have encouraged myself to try this method, and I have to admit that potatoes have been scandalised.

If you don't like pesto, you can use any other sauce or add a drizzle of extra virgin olive oil. 

However, I insist that you try the potatoes with the pesto; it is an impressive combination. 

It certainly does not have to be Christmas to be able to try this dish; we love it for any day of the year, although I would probably make the potatoes only steamed or baked and add a little less oil. ?

Ingredients SCALE (1x)

  • 1 kilo of small potatoes
  • Extra virgin olive oil, salt and black pepper to taste

For the pesto (1x):

  • 1/4 cup of walnuts (30 g)
  • 1 cup of spinach (30 g)
  • One clove garlic
  • Two tablespoons nutritional yeast or brewer's yeast
  • Four tablespoons of extra virgin olive oil
  • 1/4 teaspoon sea salt
  • Black pepper to taste

Ingredients SCALE (2x)

  • 2 kilo of small potatoes
  • Extra virgin olive oil, salt and black pepper to taste

For the pesto (2x):

  • 1/2 cup of walnuts (60 g)
  • 2 cups of spinach (60 g)
  • Two cloves of garlic
  • Four tablespoons nutritional yeast or brewer's yeast
  • Eight tablespoons of extra virgin olive oil
  • 1/2 teaspoon of sea salt
  • Black pepper to taste

Ingredients SCALE (3x)

  • 3 kilo of small potatoes
  • Extra virgin olive oil, salt and black pepper to taste

For the pesto (3x):

  • 3/4 cup walnuts (90 g)
  • 3 cup of spinach (90 g)
  • Three cloves of garlic
  • Six tablespoons nutritional yeast or brewer's yeast
  • 12 tablespoons of extra virgin olive oil
  • 3/4 teaspoon sea salt
  • Black pepper to taste

Instructions

  1. Peel the potatoes and cook them for about 10 minutes.
  2. Preheat the oven to 200ºC or 390ºF.
  3. Place the potatoes on a baking sheet, add a drizzle of oil and salt and black pepper to taste. Bake for about 20 to 30 minutes or until golden brown (cooking time may vary depending on the oven and the size of the potatoes). When the first 10 or 15 minutes have passed, turn them over so that they brown on both sides.
  4. To make the pesto, put all the ingredients in the food processor and beat until you get the desired texture. If you use a mixer, be careful not to hit it too much.
  5. Take the potatoes out of the oven, add the pesto, stir and serve.
