Easy Raw Vegan Brownies

Dates are a staple in my kitchen, I eat them daily, and I couldn't live without them; they are an excellent source of iron and other nutrients.

Some of you have a hard time finding them, especially those who live outside of Spain and in many recipes, they can be replaced by any natural sweetener or by other dried fruits such as dried apricots, plums or raisins.

In this case, I don't think it will come out if you don't use dates, and the ideal is that they are Medjool because they are much stickier, and they are also a thousand times richer.

Some time ago, I published on the blog a raw brownie made with dates that can be found in most supermarkets (they are called Deglet Nour), so they don't have to be Medjool, although it is possible that more syrup needs to be added.

Tips:

  • You can use other nuts instead of walnuts and almonds or even use just one type.
  • I love maple syrup, but any other molasses or liquid sweetener will work.
  • Instead of raw cocoa, you can use unsweetened cocoa powder, but it is less intense, so you will most likely have to add more.

Ingredients SCALE (1x)

  • 1 cup of walnuts (115 g)
  • 1 cup of raw hazelnuts (135 g)
  • 2 cups of Medjool dates (400 g)
  • Two tablespoons maple syrup
  • 1/4 cup raw cocoa powder or unsweetened cocoa powder (22 g)

Ingredients SCALE (2x)

  • 2 cups of walnuts (230 g)
  • 2 cups of raw hazelnuts (270 g)
  • 4 cups of Medjool dates (800 g)
  • Four tablespoons maple syrup
  • 1/2 cup of raw cocoa powder or unsweetened cocoa powder (44 g)

Ingredients SCALE (3x)

  • 3 cup walnuts (345 g)
  • 3 cup of raw hazelnuts (405 g)
  • 6 cups of Medjool dates (1200 g)
  • Six tablespoons maple syrup
  • 3/4 cup raw cocoa powder or unsweetened cocoa powder (66 g)

Instructions

  1. Put the nuts in the processor and beat for a few seconds until they are chopped.
  2. Add the rest of the ingredients and beat again until they are well integrated and a giant ball forms.
  3. Remove the dough from the processor and put it on a cookie sheet.
  4. Leave the brownie in the freezer for 1 to 2 hours.
  5. Cut the brownie into small pieces and store them in the fridge.
