Potatoes are one of my favourite ingredients, and I use them often. 

I like them in all possible ways, although lately I mostly prepare them steamed or baked because they are healthier and lighter cooking. 

I don't even oil them anymore when I bake them, and I usually eat them with some light, low-fat sauce, although now and then, I do want something more elaborate like these potatoes with vegan chorizo.

I don't usually eat meat substitutes in my daily life, except when I go to a restaurant or make a recipe for a blog like this one. 

Still, I was curious to try vegan chorizo, so I bought it a couple of years ago to try them (the other I used to make these vegan zucchini pizzas).

The recipe is straightforward; you have to bake the potatoes, sauté the chorizo ​​a little and make the two sauces, which I have already shared on the blog.

Instructions

  1. Preheat the oven to 220 degrees. Bake the diced potatoes on a baking sheet for about 40 minutes.
  2. In a frying pan, add a drizzle of oil and sauté the finely chopped chorizo ​​until lightly browned.
  3. Serve the potatoes with hot enchilada sauce on top, chorizo, some homemade sour sauce and chives for garnish (optional).
