Easy Vegan Oil-Free Granola

Granola is the ideal breakfast for those who are always in a hurry and do not have much time. 

It is effortless to prepare, you can use the ingredients you like the most, and you can make it in large quantities because it lasts a long time (more than 15 days).

If you have your granola ready, you can have a healthy, balanced and delicious breakfast in 1 minute. 

You have to take a bowl, add the granola and your favourite vegetable milk.

You can also add fresh fruit or any other ingredient you can think of.

We already have a couple of granola recipes on the blog, but it's so good that I never tire of experimenting and trying new recipes

I often have granola for breakfast because I prefer green smoothies or oatmeal porridge. 

Still, I do have it from time to time and above all, I love making it when I travel or when I am going to be away from home for several hours because it is a great snack. 

A month ago, we were in Madrid for a few days, and each one of us took a granola Tupper to nibble between meals.

Oil-Free Granola
Granola usually contains nuts, seeds, rolled oats, dried fruits, some sweetener, and most recipes also use oil

I was afraid to try a recipe without oil because I was afraid that the granola would not turn out well, but the result is the same, and this way, it is lighter.

Oil-Free Granola
To make the granola, mix all the ingredients in a bowl and add the mixture of water, vanilla extract and sweetener (I have used maple syrup, but you can use any other syrup or molasses). 

You can heat the liquid ingredients if you want to make it easier to integrate them with the rest of the ingredients, but it is not essential.

Before baking the granola, you have to have something similar to the photo below.

Baking time can vary from oven to oven, so I recommend that you take a look at it from time to time. 

So that the granola does not stay too hard (as if they were muesli bars), the ideal is to remove it once or twice during the baking process and stir it so that it does not stick too much.

My favourite vegetable milk is almond and cashew milk, but I prefer to drink oat milk daily because it is lighter.

There are many alternatives to cow's milk; they are healthier, are not full of cholesterol and saturated fats, and no animal has to suffer during their production (the dairy industry is one of the cruellest food industries, and that entails more animal suffering).

Homemade milk tastes much better than packaged milk and is generally cheaper.

You can substitute any ingredient and use other fruits, nuts, and seeds.

If you do not have Goji berries or you do not like them, do not worry; you can add more dates, other dried fruits or do not add anything; it is tough for the granola to come out well, it always works!

Ingredients SCALE (1x)

  • 2 cups of rolled oats (200 g)
  • 1 cup of chopped almonds (160 g)
  • 1 cup of chopped dates (170 g)
  • 1/2 cup of Goji berries (60 g)
  • 1/2 cup of sunflower seeds (70 g)
  • One tablespoon ground cinnamon
  • 1/2 cup of water (125 g)
  • One teaspoon vanilla extract (optional)
  • 2/3 cup maple syrup (215 g)

Ingredients SCALE (2x)

  • 4 cups of rolled oats (400 g)
  • 2 cup of chopped almonds (320 g)
  • 2 cups chopped dates (340 g)
  • 1 cup of Goji berries (120 g)
  • 1 cup of sunflower seeds (140 g)
  • Two tablespoon ground cinnamon
  • 1 cup of water (250 g)
  • Two teaspoon vanilla extract (optional)
  • 1 1/3 cup maple syrup (430 g)

Ingredients SCALE (3x)

  • 6 cups of rolled oats (600 g)
  • 3 cup of chopped almonds (480 g)
  • 3 cups chopped dates (510 g)
  • 1 1/2 cup of Goji berries (180 g)
  • 1 1/2 cup of sunflower seeds (210 g)
  • Three tablespoon ground cinnamon
  • 1 1/2 cup of water (375 g)
  • Three teaspoon vanilla extract (optional)
  • 2 cups of maple syrup (645 g)

Instructions

  1. Preheat the oven to 160ºC or 320ºF.
  2. Combine the rolled oats, almonds, dates, goji berries, sunflower seeds and ground cinnamon in a large bowl.
  3. You can heat the water, vanilla extract and syrup in a saucepan to make it easier to integrate them with the rest of the ingredients, but it is not necessary.
  4. Pour the liquid ingredients into the bowl and stir until thoroughly mixed.
  5. Bake the granola on a cookie sheet for about 25 minutes or until golden. During those 25 minutes, I recommend that you take the tray out 1 or 2 times to stir the granola and that it does not stick too much.
  6. Take out the tray and let the granola cool completely. Store in an airtight container (preferably glass) at room temperature.
