Today is a very special day. 

It is the day we will share the recipe for the best gluten-free brownie in the world and vegan

It has no egg, dairy, wheat or gluten and is delicious. 

Without exaggeration, it is brownie heaven.

I have always loved brownies. 

We have already published another vegan and gluten-free brownie on the blog, and although it is delicious, this new recipe has become our favourite of all time

As I like to eat brownies the most with vanilla ice cream and chocolate syrup, it is the perfect combination. 

I have to admit that chocolate syrup and vanilla ice cream are never lacking in my kitchen because they go with almost any sweet and are delicious. 

They are both vegan, of course, and although they are not exactly light and healthy, they are not the worst on the market, and I do not usually eat them daily.

If you don't have ice cream or syrup, don't worry, it's such a juicy brownie that it can be eaten on its own without any problems. 

We have added unsweetened cocoa on top to decorate (it was cuter for the photos), although I like it better without anything.

If you are on a diet, I recommend that you do not do it because it will be torture for you to have this delicious brownie in your kitchen telling you to eat me, although for indulging yourself from time to time nothing happens (or two, or three, or more).

We have used rice flour and brown rice flour, and potato starch.

You can use other flours, although you may have to adjust the amount, and I cannot guarantee that the brownie will be perfect, although it is a matter of taking a risk and trying.

To replace the butter, we have used homemade peanut butter and oil. 

If you don't have peanut butter or don't like it, you can use another butter or vegetable shortening or even oil

To replace the eggs, we have used flax seeds; although you can also use chia seeds, mashed bananas, applesauce, no egg, there are many possibilities.

We have added nuts to give the brownie a bit of joy, but you can use any dried fruit or not add anything to it; the recipe does not change

We have used coconut sugar to sweeten, but you can use brown or white sugar (although I do not recommend that you use the latter because it is not healthy), some syrup or molasses, stevia or any sweetener. 

As the dough does not have an egg, you can add it little by little and taste it until it is to your liking.

Although it is not the lightest and healthiest recipe globally, it is the best gluten-free brownie that I have tried, and also, its ingredients are much more beneficial than those used to make conventional brownies

Do not be afraid to experiment in the kitchen with new ingredients; I never dared to innovate before, but great recipes are discovered and just as simple as the traditional ones; sometimes they are even simpler, and our health thanks us. 

I don't roll over today because the brownie calls me from the kitchen, and I'm going to eat a piece; see you!

The best gluten-free brownie. This recipe is vegan and lighter and healthier than traditional brownies; it is also delicious; you have to try it!

Ingredients SCALE (1x)

  • Three tablespoons of flax seeds + 9 tablespoons of water
  • 1/2 cup of extra virgin olive oil (125 millilitres)
  • Two tablespoons peanut butter
  • 1 cup of coconut sugar (200 grams)
  • 1/2 cup of unsweetened cocoa powder (50 grams)
  • 1/4 of a cup of rice flour (40 grams)
  • 1/4 of a cup of potato starch (40 grams)
  • 3/4 of a cup of brown rice flour (105 grams)
  • 1/2 of a cup of walnuts (60 grams)

Ingredients SCALE (2x)

  • Six tablespoons of flax seeds + 18 tablespoons of water
  • 1 cup of extra virgin olive oil (250 millilitres)
  • Four tablespoons peanut butter
  • 2 cups of coconut sugar (400 grams)
  • 1 cup of unsweetened cocoa powder (100 grams)
  • 1/2 of a cup of rice flour (80 grams)
  • 1/2 of Cup of potato starch (80 grams)
  • 1 1/2 cup of brown rice flour (210 grams)
  • 1 cup of walnuts (120 grams)

Ingredients SCALE (3x)

  • Nine tablespoons of flax seeds + 27 tablespoons of water
  • 1 1/2 cup of extra virgin olive oil (375 millilitres)
  • Six tablespoons peanut butter
  • 3 cup coconut sugar (600 grams)
  • 1 1/2 cup unsweetened cocoa powder (150 grams)
  • 3/4 of a cup of rice flour (120 grams)
  • 3/4 of a cup of potato starch (120 grams)
  • 2 1/4 cup of brown rice flour (315 grams)
  • 1 1/2 cup of walnuts (180 grams)


  1. We preheat the oven to 180 degrees.
  2. We beat the flax seeds with the water in the blender and let them rest for 5 minutes.
  3. We add the olive oil, peanut butter, sugar, and the water flax mixture to a bowl. We remove.
  4. In another bowl, we add the unsweetened cocoa powder, rice flour, potato starch and brown rice flour. We remove.
  5. We pour the dry ingredients over the liquids little by little and without stopping stirring. We mix all the ingredients very well until they are perfectly integrated. We add the chopped walnuts and stir.
  6. We place the mixture on a brownie tray with parchment paper and bake for about 25 minutes at 180 degrees. The time may vary depending on your oven.
