You can use water or vegetable broth; the broth gives it more flavour, although it must be cooked.

Avoid packaged broths and especially bouillon tablets, they are full of additives, and many tend to contain monosodium glutamate, a flavour enhancer that is not beneficial to health.

If you do not have time or do not want to complicate your life, pour water on it, you will get a delicious sauce.

If you want your sauce to be lighter and prepared in less time, you can eliminate the oil, replace the garlic and onion with garlic and onion powder, and the fresh tomato with more tomato sauce; there is also a sauce with a sauce flavour spectacular.

Although this sauce is for enchiladas, it can be used for many other recipes such as pasta, rice, pizza or whatever comes to mind, but keep in mind that it is hot.

If you do not like spicy, you can eliminate the cayenne powder or add less; if you want strong emotions, add more.

It is unnecessary to beat the sauce, but it will have a more pleasant consistency if you hit it.

You can use an arm or glass mixer or a food mill, depending on what you have and how thin you want the sauce to be.

I have used an arm mixer because with the food mill, it is too thick, and with the Vitamix, it is too runny.
