I wanted to share this recipe on the blog, but I had difficulty finding coconut milk that worked perfectly. 

Coconut whipped cream is the healthiest alternative I've found to traditional whipped cream, and you only need two ingredients to make it: coconut milk and your favourite sweetener.

Until now, I had used soy cream, but the ingredients weren't exactly wholesome. 

I had also tried using coconut cream (as in this recipe for homemade Oreo cookies), but the result did not convince me.

In Spain, the coconut milk that they usually sell is not of excellent quality and generally has a low coconut content and a low-fat range since they are typically mixed with water to make them cheaper

The percentage of coconut milk has to be at least 50 or 60%.

I have read in other blogs that it is essential that milk does not have guar gum among its ingredients, but I have not been able to find any that meets the two requirements.

I have tried several sweeteners such as icing sugar (which makes the cream have a better texture), agave syrup and maple syrup, and the truth is that it was great with all three

If you use another sweetener, you may need to add more or less, so add a little, stir, taste and add more if you think it is not sweet enough.

Ingredients SCALE (1x)

  • 1 14 oz or 400 ml can of coconut milk
  • Four tablespoons icing sugar, agave or maple syrup *
  • 1/2 teaspoon vanilla extract (optional)

  • 2 14 oz or 400 ml can of coconut milk
  • Eight tablespoons icing sugar, agave or maple syrup *
  • One teaspoon vanilla extract (optional)

Ingredients SCALE (3x)

  • 3 14 oz or 400 ml can of coconut milk
  • 12 tablespoons icing sugar, agave or maple syrup *
  • 1 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Put the can of coconut milk in the fridge the night before.
  2. Also, put a large bowl and the rods in the fridge at least 15 minutes before mounting the coconut milk.
  3. Take the can out of the fridge carefully, without shaking or tilting it. Open it. There will be a solid layer on the top, and on the bottom, a kind of water or watered down coconut milk. Pour the substantial part into the bowl and save the liquid to make smoothies, sweets or whatever comes to mind.
  4. Beat with a wire mixer until consistency is similar to whipped cream.
  5. Add the sweetener and beat again for at least 1 or 2 minutes so that the ingredients mix well.
  6. Use immediately or store in the fridge (lasts 1 to 2 weeks). If you keep the cream in the refrigerator, it will have a harder consistency. If it gets too hard, whisk it before serving.

Notes

  • * If you use another sweetener, you will probably have to add more or less amount.
