Baked Buffalo Tofu Sticks

Buffalo chicken wings (or Buffalo wings in English) is a typical recipe from the United States. 

The wings are deep-fried and then covered with a mixture of hot sauce and butter or margarine.

This version is vegan, so I have used tofu instead of chicken and extra virgin olive oil instead of butter (I try to avoid margarine as much as possible because it is less healthy).

To accompany the sticks, I have prepared a kind of ranchero sauce (also typical of the United States), which is very rich and is lighter and healthier than the original.

The sticks are coated with cornstarch, so they are suitable for coeliacs. 

They are then fried, covered with the hot sauce and oil mixture, and baked.

It is not a particularly light appetiser, but it is very tasty (too much!). 

If you don't want to complicate your life, you can accompany them with any other sauce such as veganism (vegan mayonnaise), ketchup or barbecue sauce.

If you want a slightly lighter version, you can eliminate the batter, spread the sticks in hot sauce and bake them for about 15 minutes on each side or until golden brown.

They will not be as crispy as the original recipe, but they will have fewer calories, and they will be healthier.

You can use any hot sauce that you like; I used a spicy chilli sauce called Chipotle Hot Sauce, it is very rich, and the ingredients are not bad.

If you do not like spicy, you can use another sauce you want, such as soy sauce, sweet and sour sauce or whatever you can think of.

The sticks are juicier if you dip them in the sauce, but they are so rich that they can be eaten alone.

Ingredients SCALE (1x)

For the sticks (1x):

  • 275 g tofu (9.7 oz)
  • Cornstarch
  • Extra virgin olive oil to taste
  • Four tablespoons hot sauce
  • Two tablespoons of extra virgin olive oil

For the sauce (1x):

  • 1/4 cup of water (125 ml)
  • One tablespoon of lemon juice
  • One tablespoon soy sauce
  • One tablespoon of extra virgin olive oil
  • 140 g of tofu (5 oz)
  • 1/4 cup cashews (40 g)
  • 1/2 teaspoon tarragon
  • 1/2 teaspoon thyme
  • 1/2 teaspoon dill
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon sweet paprika
  • Black pepper to taste

Ingredients SCALE (2x)

For the sticks (2x):

  • 550 g tofu (19 2/5 oz)
  • Cornstarch
  • Extra virgin olive oil to taste
  • Eight tablespoons hot sauce
  • Four tablespoons of extra virgin olive oil

For the sauce (2x):

  • 1/2 cup of water (250 ml)
  • Two tablespoons lemon juice
  • Two tablespoon soy sauce
  • Two tablespoons of extra virgin olive oil
  • 280 g tofu (10 oz)
  • 1/2 cup of cashews (80 g)
  • One teaspoon tarragon
  • One teaspoon thyme
  • One teaspoon dill
  • One teaspoon garlic powder
  • One teaspoon onion powder
  • 1/2 teaspoon of sweet paprika
  • Black pepper to taste

Ingredients SCALE (3x)

For the sticks (3x):

  • 825 g tofu (29 oz)
  • Cornstarch
  • Extra virgin olive oil to taste
  • 12 tablespoons hot sauce
  • Six tablespoons of extra virgin olive oil

For the sauce (3x):

  • 3/4 cup of water (375 ml)
  • Three tablespoon lemon juice
  • Three tablespoon soy sauce
  • Three tablespoons extra virgin olive oil
  • 420 g tofu (15 oz)
  • 3/4 cup cashews (120 g)
  • 1 1/2 teaspoon tarragon
  • 1 1/2 teaspoon thyme
  • 1 1/2 teaspoon dill
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon onion powder
  • 3/4 teaspoon sweet paprika
  • Black pepper to taste

Instructions

  1. Cut the tofu into strips (I got 16). Coat it with cornstarch and fry it in a pan with extra virgin olive oil (or in a deep fryer) for about 5 minutes on each side or until golden brown. When the tofu is fried, let it cool a little to be able to handle it.
  2. In a bowl, add the hot sauce and the four tablespoons of oil. Spread the tofu sticks in the mixture and bake them on a baking sheet lined with parchment paper for about 15 minutes on each side at 200 ° C or 390 ° F.
  3. To make the sauce, put all the ingredients in a blender and beat until they are perfectly integrated.
