Although I have always been trying and looking for new dishes for the blog, I make a series of recipes every week because I love them; they are healthy and straightforward

This brown rice wok with vegetables is one of them, and the other day I realised that I had not taught you the recipe even though it is probably the recipe I make the most at home.

Since I became vegan, the options I have for eating out are more limited, and if you also try to eat healthily, things get even more complicated.

One of my favourite places is a wok in Malaga because you can put your favourite vegetables on the plate, and then they prepare it for you with the sauce and the accompaniment you want. 

I usually always choose veggies, tofu, seaweed, white rice, and a sauce with olive oil, garlic, and parsley, then I add a splash of soy sauce, and it's to die for.

One day it occurred to me to try making this wok at home, and it has become a staple. 

I use brown rice and vegetables at home, although broccoli is never missing because it is my favourite vegetable; I hated it before!

The trick is not to overcook it; it is much richer for my taste when it is crunchy and almost raw.

ADVICE:

  • You can use any vegetable, and you can also make the recipe without rice or use another cereal.
  • You can sauté the vegetables and rice with a bit of tamari or soy sauce for an oil-free version.
  • Parsley is optional, although it adds an exciting touch.
  • I love red chilli, but if you don't like spicy, don't add it.

This brown rice and vegetable wok is the recipe that I usually prepare at home because I love its taste; it is easy and nutritious.

Ingredients SCALE (1x)

  • 1/2 cup of brown rice (100 g)
  • 1/2 head of broccoli
  • 1/2 red pepper
  • 1/2 zucchini
  • 1/8 of a red cabbage head (about 80 g)
  • Two tablespoons of extra virgin olive oil
  • Four cloves of garlic
  • One handful of fresh parsley
  • One red chilli
  • Two tablespoons soy sauce or tamari
  • Sesame seeds for garnish

Ingredients SCALE (2x)

  • 1 cup of brown rice (200 g)
  • One head of broccoli
  • One red bell pepper
  • One zucchini
  • 1/4 of a head of red cabbage (about 160 g)
  • Four tablespoons of extra virgin olive oil
  • Eight cloves of garlic
  • Two handfuls of fresh parsley
  • Two red chilli
  • Four tablespoons soy sauce or tamari
  • Sesame seeds for garnish

Ingredients SCALE (3x)

  • 1 1/2 cup of brown rice (300 g)
  • 1 1/2 head of broccoli
  • 1 1/2 red bell pepper
  • 1 1/2 zucchini
  • 3/8 head of red cabbage (about 240 g)
  • Six tablespoons of extra virgin olive oil
  • 12 cloves of garlic
  • Three handfuls of fresh parsley
  • Three red chilli
  • Six tablespoons soy sauce or tamari
  • Sesame seeds for garnish

Instructions

  1. Cook the brown rice following the directions on the package (mine usually takes about 25 minutes).
  2. Heat water in a wok, and when it starts to boil, add the chopped vegetables—Cook for 1 or 2 minutes. You can also use a large pot or skillet. Strain the vegetables and reserve.
  3. In the same wok, heat the oil and sauté the chopped garlic, parsley and chilli for 1 minute over high heat, stirring constantly.
  4. Add the rest of the vegetables, the brown rice and the soy or tamari sauce and cook for 1 or 2 more minutes, stirring.
  5. Garnish with sesame seeds (optional).
