The bad thing about this sauce is that it has a high-fat content, so it is better to consume it in moderation.

However, if we substitute the oil and soy milk for cashews and water, we obtain a low-fat version, very creamy and perfect to accompany all kinds of savoury dishes.

Another difference is that to make vegan mayonnaise, the ideal is to use a hand mixer, while to make this version, it is better to use a glass blender. 

In addition, this recipe is much simpler; you have to put everything in the blender and beat, while in our original recipe, you have to be careful that the ingredients are at the same temperature. 

It is more delicate because it may not mount (although you should not have problems following our explanations to the letter).

This vegan oil-free mayonnaise is a foolproof recipe; it always comes out. 

If you like it thicker, add more cashews, and if you like it lighter, more water. 

Salt and apple cider vinegar or lemon juice is also to taste.

Ingredients SCALE (1x)

  • 1 cup of raw and unsalted cashews (150 g)
  • 1/2 cup of water (125 ml)
  • One tablespoon + 1 teaspoon apple cider vinegar or lemon juice
  • 3/4 teaspoon salt

Ingredients SCALE (2x)

  • 2 cup of raw and unsalted cashews (300 g)
  • 1 cup of water (250 ml)
  • Two tablespoons + 2 teaspoons apple cider vinegar or lemon juice
  • 1 1/2 teaspoon salt

Ingredients SCALE (3x)

  • 3 cups raw and unsalted cashews (450 g)
  • 1 1/2 cups of water (375 ml)
  • Three tablespoons + 3 teaspoons apple cider vinegar or lemon juice
  • 2 1/4 teaspoon salt

Instructions

  1. Soak the cashews in hot water for at least 20 minutes or overnight in the season's water.
  2. Strain and wash the cashews and add them to a blender with the rest of the ingredients. Beat until thoroughly combined.
  3. You can take it directly or let it cool in the fridge.
  4. Mayonnaise will keep in the fridge in an airtight container for 4-5 days.

Notes

  • You can use another type of vinegar if you want.
  • Add more or less water, vinegar/lemon juice or salt, depending on your taste and the texture you are looking for.
