With the trip to Germany, we don't have time for anything, and the days that remain here are going to be intense, but it is worth the effort.

But let's get to the important thing: the recipe.

This vegan detox soup is to die for, and it couldn't be easier. 

To make the pumpkin noodles or spaghetti, we have used the Spiralizer, but you can use another similar device or even a potato peeler to make pumpkin strips.

Another option would be to substitute them for pasta or regular noodles with or without gluten, although they are whole-grain flours and do not have additives.

We like to cook vegetables little to avoid losing many nutrients, but if you want more, increase the cooking time.

What I like the most about this soup is its colour; it is essential to include all the colours of the rainbow in our diet to balance it.

The good thing is that they are all on the same plate; that's why this soup is so nutritious, cleansing, and to die for.

Advice:

  • You can use any other vegetable, although the ideal is for the soup to be as colourful as possible.
  • If you don't eat soy, substitute a little salt for the soy sauce or tamari. You can also use miso.
  • For those who have a delicate stomach or digestive problems, the garlic or onion powder may be a bit strong; in that case, you can eliminate these ingredients or add a little fresh minced garlic with the rest of the vegetables at first.
  • If you don't have any ingredients, don't worry; use what you have on hand.

Ingredients SCALE (1x)

  • 225 g pumpkin (1/2 pound)
  • Two red onions
  • 1/2 yellow bell pepper
  • 1/4 of broccoli (only the flowers, not the stem)
  • Two sticks of celery
  • Ten cherry tomatoes
  • 1 litre of water (4 cups)
  • Four tablespoons soy sauce or tamari
  • One teaspoon ground ginger
  • One tablespoon garlic powder
  • One tablespoon onion powder
  • One tablespoon Provencal herbs
  • Two tablespoons of brewer's yeast or nutritional yeast
  • Lemon juice to taste

Ingredients SCALE (2x)

  • 1 pound pumpkin (450 g)
  • Four red onions
  • One yellow bell pepper
  • 1/2 of broccoli (only the flowers, not the stem)
  • Four sticks of celery
  • 20 cherry tomatoes
  • 2 litres of water (8 cups)
  • Eight tablespoons tamari or soy sauce
  • Two teaspoon ground ginger
  • Two tablespoon garlic powder
  • Two tablespoon onion powder
  • Two tablespoon Provencal herbs
  • Four tablespoons of brewer's yeast or nutritional yeast
  • Lemon juice to taste

Ingredients SCALE (3x)

  • 1 1/2 pound pumpkin (675 g)
  • Six red onions
  • 1 1/2 yellow bell pepper
  • 3/4 of broccoli (only the flowers, not the stem)
  • Six sticks of celery
  • 30 cherry tomatoes
  • 3 litres of water (12 cups)
  • 12 tablespoons tamari or soy sauce
  • Three teaspoon ground ginger
  • Three tablespoon garlic powder
  • Three tablespoon onion powder
  • Three tablespoon Provencal herbs
  • Six tablespoons of brewer's yeast or nutritional yeast
  • Lemon juice to taste

Instructions

  1. Make the pumpkin spaghetti using the Spiralizer or a potato peeler. If you don't have either, chop it up to your liking.
  2. Add all the chopped vegetables together with the pumpkin spaghetti, the water, the soy sauce, the spices (ginger, garlic and onion powder) and the Provencal herbs and when it comes to a boil, cook over medium-high heat for about 5 or 10 minutes or until vegetables are to your liking.
  3. When the soup is ready, add the nutritional yeast and lemon off the heat and stir.
