This is the wealthiest vegan ice cream I have tasted so far; I liked it even more than the packaged ones; it is a very healthy and creamy option, for which only four ingredients are needed.

I have not tried to eliminate cocoa and make ice cream of other flavours, but I am sure that adjusting the quantities can make all kinds of ice cream.

Ingredients SCALE (1x)

  • One can of coconut milk (400 ml or 15 oz)
  • 1/2 cup of agave syrup (160 g)
  • 1 and 1/2 cups of raw and unsalted cashews (200 g)
  • Four tablespoons unsweetened cocoa powder

Ingredients SCALE (2x)

  • Two can of coconut milk (400 ml or 30 oz)
  • 1 cup of agave syrup (320 g)
  • 2 and 1/2 cups of raw and unsalted cashews (400 g)
  • Eight tablespoons unsweetened cocoa powder

Ingredients SCALE (3x)

  • Three can of coconut milk (400 ml or 45 oz)
  • 1 1/2 cup of agave syrup (480 g)
  • 3 and 1/2 cups of raw and unsalted cashews (600 g)
  • 12 tablespoons unsweetened cocoa powder

Instructions

  1. We leave the cashews to soak for at least 4 hours.
  2. We beat all the ingredients in a blender. We keep the mixture in the fridge to chill for at least 4 hours, better overnight.
  3. We use a refrigerator and follow the instructions. So basically, what we did was leave the container of the refrigerator in the freezer the night before and the next day adds the mixture little by little with the machine running. Then we let her make the ice cream for about 30 minutes. Once the ice cream is ready, Who can eat it directly?
  4. We can keep the ice cream in an airtight container in the freezer for a week or two. I recommend that you take it out for a while before eating it because it will be very hard.

Notes

  • - Recipe adapted from Minimalist Baker.
  • - You can substitute the agave syrup for any other sweetener.
  • - I have not tried to make this ice cream without a refrigerator, but I suppose it will work, although it will not be as creamy inconsistency. You have to put the bowl with the mixture in the freezer for 7 or 8 hours, depending on the texture you want to achieve. So that no crystals come out, Who must stir them every half hour for at least the first 2 or 3 hours.
