Vegan Chocolate and Coconut Macaroons.- Only five ingredients are needed to make these vegan chocolate and coconut macarons, and they are prepared in less than 30 minutes. They are my new obsession!
I don't know why I haven't made this recipe before, I had wanted to try it for quite some time, but I was never encouraged.

I think it may be because I associate Macaroons with the traditional recipe that is quite laborious and delicate. 

Still, this version, in addition to being vegan and healthy, is straightforward and fast.

These Macaroons do not taste like the traditional ones because their ingredients are different, but they have surprised me a lot and have become one of my favourite sweets; they are wealthy, and the best of all is that they are ready in less than 30 minutes.

Advice:

  • The grated coconut and ground almonds are essential ingredients in this recipe, so I can't give you another option.
  • If you want, you can grind the almonds yourself or buy them already ground.
  • Instead of agave syrup, you can use maple syrup or any other liquid sweetener.
  • You can use the vegetable milk you want.

Ingredients SCALE (1x)

  • 1 cup of grated coconut (100 g)
  • 1/2 cup of ground almonds (50 g)
  • 1/4 cup of agave syrup (80 g)
  • Two tablespoons unsweetened cocoa powder
  • Two tablespoons almond milk

Ingredients SCALE (2x)

  • 2 cup of grated coconut (200 g)
  • 1 cup of ground almonds (100 g)
  • 1/2 cup of agave syrup (160 g)
  • Four tablespoons unsweetened cocoa powder
  • Four tablespoons of almond milk

Ingredients SCALE (3x)

  • 3 cup of grated coconut (300 g)
  • 1 1/2 cup of ground almonds (150 g)
  • 3/4 cup of agave syrup (240 g)
  • Six tablespoons unsweetened cocoa powder
  • Six tablespoons of almond milk

Instructions

  1. We preheat the oven to 180ºC or 350ºF.
  2. In a bowl, we toss all the ingredients and mix until they are well integrated.
  3. To shape the Macaroons, we use an ice cream scoop; we put the dough inside, press and squeeze the lever of the spoon mechanism so that our Macaroons come out. You can also use your hands, making balls and then squashing them from the bottom.
  4. Bake the Macaroons on a tray with greaseproof paper for about 15 minutes or until golden brown.
  5. Ideally, store them in an airtight container at room temperature for a few days.
