Spring is here! 

Finally! Although it is not as hot as I would like, at least we have left winter behind, with that I am satisfied. 

To celebrate, we bring you a delicious spring salad with seasonal products.

I'm addicted to salads, I confess.

They are healthy; they are delicious; there are a thousand different combinations, so many that it is impossible to get bored, and on top of that, they are light (or they can be).

It's rare the day that I don't eat salad; I eat them all year round. 

It is essential to eat raw food because it keeps all its enzymes and nutrients intact, which does not happen with cooked food.

For this reason, I make sure that most of the fruits and vegetables that I eat are in their natural state; in addition, we waste much less time preparing a salad than any other cooked dish because they tend to be more elaborate.

Salads can be very healthy and light, as long as we are careful with the ingredients and especially with the sauces we use. 

If we use fatty ingredients such as cheese and a very caloric sauce, such as Caesar, or if we add a large amount of oil (which, although it is very healthy, is necessary to take in moderation), we can achieve the opposite effect, make our salad a very caloric dish.

We have chosen these ingredients because, in addition to being seasonal, it is one of our favourite combinations and the strawberries give it a different exciting touch.

Of course, you can add more ingredients or change some if you don't like it.

We have used lemon juice and a little salt and olive oil for the dressing because we like to cook with a bit of salt and because avocado and nuts are fatty, so we prefer not to add so much oil.

Now that the heat is on, we will make many more fresh and light dishes because it is what we want and because summer is just around the corner and the bikini operation is calling out to us (although we do not want to hear it).

  • 12 romaine lettuce leaves
  • Six strawberries
  • 1/2 avocado
  • 1/4 onion or spring onion
  • Two tablespoons pumpkin seeds
  • The juice of half a lemon
  • Salt and olive oil to taste

Ingredients SCALE (2x)

  • 24 romaine lettuce leaves
  • 12 strawberries
  • One avocado
  • 1/2 onion or spring onion
  • Four tablespoons pumpkin seeds
  • The juice of half a lemon
  • Salt and olive oil to taste

Ingredients SCALE (3x)

  • 36 romaine lettuce leaves
  • 18 strawberries
  • 1 1/2 avocado
  • 3/4 of onion or spring onion
  • Six tablespoons pumpkin seeds
  • The juice of half a lemon
  • Salt and olive oil to taste

Instructions

  1. Chop the lettuce, strawberries, avocado and chives. We put them in a bowl or salad bowl.
  2. Add the pumpkin seeds, the juice of half a lemon, the salt and the olive oil. We stir so that the ingredients are mixed and serve.
