The spaghetti that we have used is gluten-free; you can already find them in many supermarkets at a reasonable price; they are wealthy, although they break more easily.

  • One teaspoon of extra virgin olive oil
  • Four cloves of garlic
  • One cayenne pepper or one teaspoon of chilli powder
  • 400 millilitres of coconut milk (13.5 fluid ounces)
  • One tablespoon of lemon juice
  • One teaspoon ground ginger
  • Black pepper to taste
  • 60 grams of spinach (2 cups)

Ingredients SCALE (2x)

  • 800 grams of gluten-free pasta
  • Two teaspoons extra virgin olive oil
  • Eight cloves of garlic
  • Two chilli cayenne or one teaspoon chilli powder
  • 800 millilitres of coconut milk (13.10 fluid ounces)
  • Two tablespoons lemon juice
  • Two teaspoon ground ginger
  • Black pepper to taste
  • 120 grams of spinach (4 cups)

Ingredients SCALE (3x)

  • 1200 grams of gluten-free pasta
  • Three teaspoons extra virgin olive oil
  • 12 cloves of garlic
  • Three cayenne chillies or one teaspoon chilli powder
  • 1200 millilitres of coconut milk (13.15 fluid ounces)
  • Three tablespoon lemon juice
  • Three teaspoon ground ginger
  • Black pepper to taste
  • 180 grams of spinach (6 cups)

Instructions

  1. Cook the pasta in plenty of boiling water for the minutes recommended by the manufacturer.
  2. We add the oil to a frying pan for the sauce, and when it is hot, we add the sliced ​​garlic and the chopped chilli.
  3. When the garlic begins to brown, add the coconut milk, lemon juice, ginger powder and black pepper to taste. We leave at least 5 minutes for it to take flavour.
  4. We put the sauce in the blender along with the spinach, we beat.
  5. We mix the spaghetti with the sauce in the pan, and if we want, we can leave the pasta for another 5 minutes so that it integrates better with the sauce, although it is optional.
