Raw Vegan Brownie Recipe

Today's recipe has changed my life. 

It may sound exaggerated (and it probably is), but it is the truth. 

This raw brownie (or raw brownie) is delicious; it takes 5 minutes and is also very healthy; what more could you ask for!

It is an ideal recipe to make in summer because it does not need baking and is taken fresh from the fridge. 

Otherwise, it could melt (at least here, which sometimes seems like we are in the Sahara desert).

We wanted to make a sweet of this style for a long time, which was 100% healthy, since it does not contain refined flours, sugar; it is suitable for celiacs, vegans and lactose intolerant. 

In addition, being raw takes advantage of all the nutrients and properties of the food that we are using.

Depending on the mould you use, your raw brownie will be thinner or thicker; ours was about 2 centimetres wide.

I also recommend that you taste the mixture before adding the almonds; in this way, if it seems too bitter, you can add more agave.

It is very beneficial to incorporate many raw dishes into our diet (if possible) because a large part of its nutrients are lost when we cook food. 

However, this varies depending on the cooking method we use.

For the brownie to be 100% raw, we should use natural cocoa powder (which you can find in some herbalists and websites) instead of the roasted cocoa used in confectionery.

Ingredients SCALE (1x)

  • 100 grams of walnuts
  • 70 grams of unsweetened cocoa powder
  • 1/4 teaspoon of salt
  • 220 grams of pitted dates
  • Three tablespoons agave syrup
  • 40 grams of raw almonds (unroasted and unsalted)

Ingredients SCALE (2x)

  • 200 grams of walnuts
  • 140 grams of unsweetened cocoa powder
  • 1/2 teaspoon of salt
  • 440 grams of pitted dates
  • Six tablespoons agave syrup
  • 80 grams of raw almonds (unroasted and unsalted)

Ingredients SCALE (3x)

  • 300 grams of walnuts
  • 210 grams of unsweetened cocoa powder
  • 3/4 teaspoon of salt
  • 660 grams of pitted dates
  • Nine tablespoons agave syrup
  • 120 grams of raw almonds (unroasted and unsalted)

Instructions

  1. In a food processor, blender or mincer, we add the walnuts and crush them until they turn into a powder.
  2. Add the cocoa and salt and blend again until they are integrated.
  3. We add the dates little by little because otherwise, the robot could get stuck.
  4. Add the three tablespoons of agave and stir. It should have a consistency like cake crumbs, but it should be sticky and stay compact when pressed; if it doesn't stay that way, you can add more dates (if it's too soft) or more agave (if it's too dry).
  5. Finally, we add the chopped almonds and stir so that they are distributed. You can chop them with a knife into large pieces, or if you prefer, you can crush them with the robot so that they are smaller pieces. We like to find almonds, so we don't chop them too much. We place plastic wrap or baking paper in a square or rectangular container (use 15 × 20 containers) and add the mixture. We press with the help of a spoon or our hands to press it and leave it in the shape of a brownie. We put it in the fridge for at least a couple of hours. We take it out after that time, unmold and sprinkle it with raw cocoa.
