We finally cheered up with something sweet for the El Asaltablogs challenge, and this peach and pistachio cake was irresistible.

The original version (which you can see here) were tartlets, but since we celebrated at home, we made it in a tart version, and we all loved it.

We have also replaced the sugar with agave syrup and the apricot jam with this peach jam that we made ourselves.

One of the reasons we have encouraged this cake has been precisely that it was a straightforward recipe; in addition, we love peaches and use pistachios in cakes

As if all these reasons were not enough, it is a vegan recipe (if you buy a puff pastry that does not have butter, in our case, it was La Cocinera brand without hydrogenated fat), so it has everything.

Peach and Pistachio Tart
Peach and pistachio tart - a delicious summer dessert that combines soft, sweet peach, a pistachio frangipane and a crisp base. So good plus pretty healthy too.

Ingredients SCALE (1x)

  • One sheet of puff pastry (we used around one)
  • One tablespoon of agave syrup (or honey)
  • 45 grams of unsalted peeled pistachios
  • Three peaches
  • One tablespoon of hot water
  • One tablespoon of peach jam

Ingredients SCALE (2x)

  • Two puff pastry sheet (we used around one)
  • Two tablespoon agave syrup (or honey)
  • 90 grams of unsalted peeled pistachios
  • Six peaches
  • Two tablespoons hot water
  • Two tablespoon peach jam

Ingredients SCALE (3x)

  • Three puff pastry sheet (we used around one)
  • Three tablespoon agave syrup (or honey)
  • 135 grams of unsalted peeled pistachios
  • Nine peaches
  • Three tablespoons hot water
  • Three tablespoon peach jam


  1. We place the puff pastry sheet on greaseproof paper and, in turn, on a grid tray. With the help of a knife, we ​​are marking an edge of 1 cm. wide so that it rises when baked. With the fork, we prick the rest of the surface.
  2. We paint the puff pastry with agave, we use a brush, but you can do it with a spoon.
  3. Chop half of the pistachios into large pieces and reserve. The other half is finely chopped and sprinkled over the puff pastry.
  4. We peel the peaches, cut them into thin slices and place them on the cake until the entire surface is covered.
  5. We add the other half of the pistachios that we had reserved on top of the peaches.
  6. With the oven preheated to 200 degrees, we bake for 15 minutes until our cake is golden brown and the puff pastry has risen.
  7. We mix a tablespoon of hot water and the tablespoon of peach jam and paint all the peaches. We bake again for 2 minutes.
