Many spicy recipes have never been prepared in my house, some with a bit of cayenne pepper, but little else.

For a few years, I have picked up the taste, and I like to use it often, although I still find it challenging to eat healthy dishes such as Indian or Mexican cuisine.

The fact is that as we intend to travel around the world for the next few years, I want to get used to it little by little so as not to die trying, as it almost happened to me in Frankfurt when we went to an Indian restaurant and everything was too itchy for us, we ended up with a numb tongue, very thirsty and a queasy stomach.

I wouldn't say I like to follow recipes to the letter, and I constantly change them to my liking or adapt them to what I have at hand, but that's the good thing about cooking.

Some people are bothered that a recipe is not exact to the original, but I believe that it is better to be flexible and adapt things to our way of seeing life and what suits us best or makes us happier.

Advice:

  • If you want it to have more flavour, you can toast the walnuts in a pan without oil, although we prefer not to do so to avoid wasting time.
  • If you can't find cayenne chilli or cayenne powder, you can use any other type of chilli or chilli.
  • Spicy is very personal, so I recommend that you add it little by little and try it until it is to your liking.
  • The rolled oats are for thickening, so they are optional. If you can't take them, don't throw them out. The original recipe calls for bread, but we prefer to use oatmeal because it is healthier.
  • The concentrated tomato gives it a more intense flavour, but it is not an essential ingredient.
  • If you prefer not to use oil, you can eliminate it and add more lemon juice, water, tahini, whatever happens to you!

Ingredients SCALE (1x)

  • One clove garlic
  • 180 g roasted red peppers (1 cup)
  • 70 g walnuts (2/3 cup)
  • 1/8 teaspoon cayenne powder or two cayenne chillies
  • 30 g of rolled oats (1/4 cup)
  • Four tablespoons tomato paste
  • Two tablespoons of extra virgin olive oil
  • Two teaspoons ground cumin
  • The juice of half a lemon

Ingredients SCALE (2x)

  • Two cloves of garlic
  • 360 g roasted red peppers (2 cups)
  • 140 g walnuts (1 1/3 cup)
  • 1/4 teaspoon cayenne powder or two cayenne chillies
  • 60 g of rolled oats (1/2 cup)
  • Eight tablespoons tomato paste
  • Four tablespoons of extra virgin olive oil
  • Four teaspoons ground cumin
  • The juice of half a lemon

Ingredients SCALE (3x)

  • Three cloves of garlic
  • 540 g roasted red peppers (3 cups)
  • 210 g walnuts (2 cups)
  • 3/8 teaspoon cayenne powder or two cayenne chillies
  • 90 g of rolled oats (3/4 cup)
  • 12 tablespoons tomato paste
  • Six tablespoons of extra virgin olive oil
  • Six teaspoons ground cumin
  • The juice of half a lemon

Instructions

  1. Put all the ingredients in a food processor and beat until you get a smooth paste. You can also use a mixer, although be careful not to hit too much.

Notes

  • If you use oat flakes with a gluten content less than 20 ppm or 20 mg/kg, it will be a recipe suitable for celiacs, as indicated by the EC 41/2009 regulation. However, people with severe gluten sensitivity can have symptoms below 20 ppm, so they should be aware of their tolerance level.
