I love the typical recipes and flavours of Mexican cuisine.

I have never been a big fan of spicy, but over the years and mainly thanks to Waleed, I like it more and more. ?

I usually make the recipes in my way, and many times, they are different from the original ones. 

Still, I lovingly version them and adapt them to my taste and the ingredients I usually use.

This sauce is fantastic, seriously, it is sooooo rich, and it is one of those recipes that I like so much because they are ready in a moment; you have to mix the ingredients and serve.

I have used a food processor because I like the texture it gives to the sauces, and it is more comfortable, but if you want, you can chop the vegetables by hand.

If you use a blender, you will have a much more liquid texture, but it is sure to be very good.

Making sauces at home is easy, and you don't waste a lot of time as you can see, so I encourage you to make them yourself and do not buy them packaged because they usually have additives, preservatives, and vegetables that have lost part of their nutrients, in addition, the Homemade sauces are generally healthier.

This Mexican sauce is very light and does not contain oil. 

I love eating it with nachos or crudités (carrot and zucchini are my favourites), but it is also ideal for sandwiches, burritos, tacos or whatever you can think of. ?

Homemade Restaurant Style Sauce: A delicious sauce that is prepared in less than 10 minutes. You have to beat!
Advice:

  • If you don't like spicy, you can make the sauce anyway; don't add chilli.
  • I have used red chillies because they were the ones I had, but you can use any hot pepper like serrano pepper, jalapeño or chilli.
  • You can substitute canned tomatoes for fresh tomatoes if they are in season.
  • Add your favourite vegetables, spices and herbs - don't be afraid to experiment!

Ingredients SCALE (1x)

  • Two cans of canned tomatoes (800g) *
  • Two cloves of garlic
  • One red chilli
  • One handful of fresh coriander
  • One red onion
  • One teaspoon ground cumin
  • 1/2 teaspoon of sea salt
  • One teaspoon maple syrup
  • The juice of 1 lime
  • Black pepper to taste

Ingredients SCALE (2x)

  • Four cans of canned tomatoes (1600 g) *
  • Four cloves of garlic
  • Two red chilli
  • Two handfuls of fresh coriander
  • Two red onion
  • Two teaspoon ground cumin
  • One teaspoon of sea salt
  • Two teaspoon maple syrup
  • The juice of 1 lime
  • Black pepper to taste

Ingredients SCALE (3x)

  • Six cans of canned tomatoes (2400 g) *
  • Six cloves of garlic
  • Three red chilli
  • Three handfuls of fresh coriander
  • Three red onion
  • Three teaspoon ground cumin
  • 1 1/2 teaspoon sea salt
  • Three teaspoon maple syrup
  • The juice of 1 lime
  • Black pepper to taste

Instructions

  1. I usually strain the tomatoes and use the liquid to make soup, but you can add some juice if you see that the sauce is too thick for you.
  2. Put all the ingredients in the food processor and beat until it has the desired consistency.
  3. Serve immediately or keep it in the fridge in an airtight container (the ideal is to consume it in 3 or 4 days).

Notes

  • * Tomato cans weigh 400 grams with the liquid and 240 grams of drained net weight
