Sweets and chocolate have a terrible reputation, but they do not have to make you fat, and we can include them in a healthy diet as long as we make healthy recipes

As you may already know, we have a diet high in carbohydrates and low in fat, but that does not mean that we cannot enjoy our favourite dishes; we look for alternatives that are low in fat or made with healthy fats.

This is the third chocolate mousse that we share with you; the first was made with avocado, and the second with banana and avocado.

The base of today's is the sweet potato, and it has an incredible texture; it has nothing to envy a non-vegan chocolate mousse! 

In addition, it does not have cholesterol, it is low in fat (if you use low-fat vegetable milk such as oatmeal or rice), and it is much healthier.

Sweet potatoes give a lot of play in baking; it's a shame it took me so long to realise it. 

The first time I used it was to make this sweet potato brownie; it is also low in fat and to die for.

The good thing about this recipe is that you do not need an oven to prepare it, and it is straightforward because you only have to steam the sweet potato and beat the rest of the ingredients.

If you want, you can also cook it (although part of the nutrients will remain in the water) or bake it (it will have a more intense flavour, but it is more practical for me to steam it).

Advice:

  • The sweet potato has a sweet taste, but we also add dates and a little maple syrup, but you may like the mousse more or less sweet. Try it on the go.
  • Who cannot substitute the sweet potato for something else? If you can't find it or don't like it, try one of the other two recipes for chocolate mousse that we have on the blog.
  • You can use the sweetener you want, although I can't tell you the amounts. Add it little by little until it is to your liking.
  • You can also use raw cocoa or carob powder, but you may have to add more or less sweetener.
  • We use oat milk, but you can use any other non-dairy milk or even water, although the mousse will have less flavour.

Ingredients SCALE (1x)

  • 1 pound sweet potato
  • 1 cup of non-dairy milk (250 ml)
  • 1/2 cup of unsweetened cocoa powder (40 g)
  • Two tablespoons maple syrup
  • 8 Deglet Nour or 4 Medjool dates

Ingredients SCALE (2x)

  • 2 2 pound sweet potatoes
  • 2 cup of non-dairy milk (500 ml)
  • 1 cup of unsweetened cocoa powder (80 g)
  • Four tablespoons maple syrup
  • 16 Deglet Nour or 4 Medjool dates

Ingredients SCALE (3x)

  • Three 3-pound sweet potatoes
  • 3 cup of non-dairy milk (750 ml)
  • 1 1/2 cup unsweetened cocoa powder (120 g)
  • Six tablespoons maple syrup
  • 24 Deglet Nour dates or 4 Medjool

Instructions

  1. Peel and chop the sweet potato and steam it for about 25 minutes or until tender. Let it cool down.
  2. In a blender, add the sweet potato and the rest of the ingredients and beat until well integrated.
  3. You can serve the mousse immediately, but we prefer to leave it in the fridge for at least an hour.
  4. We decorate the mousse with chopped pistachios and cocoa nibs.
