We are changing some of our most popular recipes for our day today, and since we often make vegan cheese and it is one of your favourite recipes, we had to share with you this fat-free version, which has nothing to envy to the original!

You can use it as a dip to dip nachos, pita bread or crudités, with pasta to make delicious macaroni and cheese, in pizzas, risottos and in general to replace cheese in almost any recipe you can think of.

ADVICE:

  • If you want the cheese to be creamier, you can use non-dairy milk instead of water, but it has to be milk that does not have a sweetener. Otherwise, your cheese will taste strange.
  • If you don't consume soy, you can add sea salt and if the cheese is too thick, add a little more water or lemon juice.
  • You can also use onion powder, pepper, chilli, or any other spice or herb that you like.

Ingredients SCALE (1x)

  • 2 cups of diced potatoes (360 g)
  • 1 cup diced carrots (135 g)
  • 3/4 cup of water (190 g)
  • Four tablespoons nutritional or beer yeast
  • Three tablespoons tamari or soy sauce
  • Two tablespoons lemon juice
  • Two teaspoons garlic powder

Ingredients SCALE (2x)

  • 4 cups diced potatoes (720 g)
  • 2 cup diced carrots (270 g)
  • 1 1/2 cup of water (380 g)
  • Eight tablespoons nutritional or beer yeast
  • Six tablespoons soy sauce or tamari
  • Four tablespoons lemon juice
  • Four teaspoons garlic powder

Ingredients SCALE (3x)

  • 6 cups diced potatoes (1080 g)
  • 3 cup diced carrots (405 g)
  • 2 1/4 cup of water (570 g)
  • 12 tablespoons nutritional or beer yeast
  • Nine tablespoons soy sauce or tamari
  • Six tablespoons lemon juice
  • Six teaspoons garlic powder

Instructions

  1. Steam the potatoes and carrots until tender. You can also cook them if you want.
  2. Strain them, put them in the blender and the rest of the ingredients, and beat until all the ingredients are well integrated.
