Vegan Curry Lentils Recipe

You will love these curried lentils; it is a simple recipe but with a lot of flavours. 

It's my favourite lentil recipe, and I eat it almost every week. 

If you like Indian food, you have to try them, and if not also, because they are delicious!

We like to accompany the lentils with rice to have a very satisfying and more complete meal. 

It is an ideal recipe to lose weight because it satisfies a lot and leaves you satisfied, so we do not want to snack and eat things that we should not.

I love coconut milk; it indeed has fat, but eating it from time to time within a healthy and balanced diet is not a problem; we make it homemade, and we know that it is 100% natural

Anyway, if you don't like coconut milk or prefer a lighter version, you can replace it with water or another type of milk.

The rest of the ingredients are very light and nutritious. 

Bringing spices is a recipe with many flavours; you can add the amount you like (we love that it is pretty hot) or substitute or eliminate some of the ones we have used.

You can also add more, this is our proposal, but you can always modify our recipes to your liking; we love to experiment with other people's recipes!

Garam masala is a mixture of spices widely used in Indian cuisine. 

If you can't find it, you can use any of the spices it contains. 

The spices may vary depending on the manufacturer. 

Still, it usually includes red chilli, garlic powder, ginger powder, sesame, mustard seeds, turmeric, coriander, cloves, black pepper, cardamom, bay leaves, cumin, nutmeg and fennel.

It is a straightforward recipe, although it takes time.

The good thing is that you don't have to watch the fire all the time, so you can take advantage of your time doing other things while the curry lentils are cooking. 

You can add more or less liquid (coconut milk, water or whatever milk you use) if you like it to be soupier, although you can also rectify it on the fly if you see that it has run dry.

We eat legumes at least 3 or 4 times a week, and we are always trying new recipes because we love to change so as not to get bored; also, if we did not experiment, we would not find such beautiful recipes as these curried lentils, which are a staple in our kitchen.

This vegan lentil curry is fantastic. It’s simple, exotic, spicy, tasty, creamy and has an intense coconut flavour. I like to serve it with rice.

Ingredients SCALE (1x)

  • 1 cup of lentils (220 grams)
  • 1 cup of basmati rice (200 grams)
  • Two cloves of garlic
  • 1/2 onion
  • One tablespoon of extra virgin olive oil
  • 450 grams of tomato sauce
  • 2/3 cup coconut milk (150 grams)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • One teaspoon garam masala
  • Two teaspoons curry

Ingredients SCALE (2x)

  • 2 cup of lentils (440 grams)
  • 2 cup of basmati rice (400 grams)
  • Four cloves of garlic
  • One onion
  • Two tablespoons of extra virgin olive oil
  • 900 grams of tomato sauce
  • 1 1/3 cup coconut milk (300 grams)
  • One teaspoon garlic powder
  • One teaspoon ground ginger
  • One teaspoon turmeric
  • Two teaspoon garam masala
  • Four teaspoons curry

Ingredients SCALE (3x)

  • 3 cup of lentils (660 grams)
  • 3 cup basmati rice (600 grams)
  • Six cloves of garlic
  • 1 1/2 onion
  • Three tablespoons extra virgin olive oil
  • 1350 grams of tomato sauce
  • 2 cup coconut milk (450 grams)
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon ground ginger
  • 1 1/2 teaspoon turmeric
  • Three teaspoon garam masala
  • Six teaspoons curry


  1. In a pot with boiling water, add the lentils and let them cook over medium-high heat for 40 minutes (the time may vary depending on the type of lentils you use).
  2. In a frying pan, we add one or two tablespoons of oil, and when it is hot, we add the chopped garlic and onion, let them brown, add the tomato sauce, the coconut milk and the spices. We remove.
  3. After about 5 minutes, add the drained lentils, stir and leave at least 15 or 20 minutes over medium heat. The longer it is, the more flavour it will have.
  4. We put the basmati rice in boiling water and cook it over medium-high heat for 12 minutes or until it is to your liking.
  5. We serve the rice and place the curried lentils on top or directly mix the two.
