A few days ago, I shared a photo on Instagram similar to what you can see below: this delicious bean stew ready in just 15 minutes

It is a very nutritious and healthy meal because eating healthily is unnecessary to spend hours in the kitchen. 

It is a matter of organising ourselves and having a repertoire of recipes that we like to make daily.

You can use canned beans (try to have as few additives as possible) or cook them yourself (ideally).

I like to make large amounts of brown rice and legumes that I cook in water without any other ingredients and keep in airtight containers to prepare my meals in no time. 

It is instrumental if you do not have time, and thus you do not fall into the temptation of resorting to precooked and highly refined foods.

If you don't like white beans or have another type of beans or legume in your kitchen, don't worry, the stew will be just as delicious.

Waleed likes to eat this stew as is, accompanied by a salad (as you can see in the first photo), on the other hand, I want to eat it on a bed of some green leaf such as canonical ones (as in the image above ) and mix it all up. 

It is essential to eat green leaves every day, it is one of the most nutritious foods that exist, and they have many benefits for our health.

To make this stew, you don't need to use oil; the only fat it contains is tahini. 

The tomato sauce that I have used has no oil and is very natural, but if you cannot find a similar one, you can use any tomato sauce or chopped canned or raw tomatoes.

I prefer to use dried tomatoes hydrated in water because they are lighter, but dried tomatoes in oil are more decadent and are an excellent alternative.

If you use corn, make sure that it is not transgenic. 

Unfortunately, the vast majority of the corn that is sold is. 

You can add other ingredients that you like; it is a very versatile recipe.

Ingredients SCALE (1x)

  • 400 g canned or cooked white beans (14 oz)
  • 2 cups of tomato sauce (500 g)
  • 1 1/2 cup of dried tomatoes hydrated in water or oil (80 g)
  • 1 cup of corn (135 g)
  • Two tablespoons tahini
  • One tablespoon onion powder
  • One tablespoon garlic powder
  • One tablespoon of sweet paprika
  • Black pepper to taste
  • Lambs and sesame seeds for garnish

Ingredients SCALE (2x)

  • 800 g canned or cooked white beans (28 oz)
  • 4 cups of tomato sauce (1000 g)
  • 3 cup of dried tomatoes hydrated in water or oil (160 g)
  • 2 cup corn (270 g)
  • Four tablespoons of tahini
  • Two tablespoon onion powder
  • Two tablespoon garlic powder
  • Two tablespoons sweet paprika
  • Black pepper to taste
  • Lambs lettuce and sesame seeds for garnish

Ingredients SCALE (3x)

  • 1200 g canned or cooked white beans (42 oz)
  • 6 cups of tomato sauce (1500 g)
  • 4 1/2 cup of dried tomatoes hydrated in water or oil (240 g)
  • 3 cup corn (405 g)
  • Six tablespoons of tahini
  • Three tablespoon onion powder
  • Three tablespoon garlic powder
  • Three tablespoons sweet paprika
  • Black pepper to taste
  • Lambs lettuce and sesame seeds for garnish

Instructions

  1. You can use sun-dried tomatoes in oil that you make yourself or buy ready-made ones. I prefer to use tomatoes hydrated in water; leave them in hot water for at least 20 minutes, although the idea is to leave them until they are soft. If you don't want to complicate your life, delete this ingredient.
  2. In a pot or pan, mix all the ingredients, stir and cook for about 10 to 15 minutes.
  3. Serve with lamb's lettuce and sesame seeds (optional).
