Preparing a wok is very simple; you only have to cook the vegetables; you can do it steamed, boiled or sautéed or a combination of both.

I usually steam them first or cook them and then sauté them, so I don't have to use so much oil. On the other hand, you have to cook the complement to your vegetables (cereals, legumes, tofu, whatever you want) and sauté everything in a pan with your favourite sauce or spices.

Ingredients SCALE (1x)

  • 1 cup of quinoa (200 g)
  • 1/2 onion
  • 1/2 red pepper
  • 1 cup of red cabbage (70 g)
  • One carrot
  • 1/2 head of broccoli
  • Two tablespoons of extra virgin olive oil
  • Four cloves of garlic
  • 1/4 teaspoon cayenne powder
  • 1/2 teaspoon ground ginger
  • One tablespoon tamari or soy sauce
  • One tablespoon of ground panela or brown or coconut sugar
  • Sesame seeds

Ingredients SCALE (2x)

  • 2 cups of quinoa (400 g)
  • One onion
  • One red bell pepper
  • 2 cup of red cabbage (140 g)
  • Two carrot
  • One head of broccoli
  • Four tablespoons of extra virgin olive oil
  • Eight cloves of garlic
  • 1/2 teaspoon cayenne powder
  • One teaspoon ground ginger
  • Two tablespoon tamari or soy sauce
  • Two tablespoon ground panela or brown or coconut sugar
  • Sesame seeds

Ingredients SCALE (3x)

  • 3 cup of quinoa (600 g)
  • 1 1/2 onion
  • 1 1/2 red bell pepper
  • 3 Cup of red cabbage (210 g)
  • Three carrot
  • 1 1/2 head of broccoli
  • Six tablespoons of extra virgin olive oil
  • 12 cloves of garlic
  • 3/4 teaspoon cayenne powder
  • 1 1/2 teaspoon ground ginger
  • Three tablespoon tamari or soy sauce
  • Three tablespoon ground panela or brown or coconut sugar
  • Sesame seeds

Instructions

  1. We cook the quinoa following the instructions on the package. You can see how we prepare it in this post.
  2. Cut the onion, pepper, red cabbage and carrot into julienne strips.
  3. Cut the broccoli head into smaller pieces using only the flowers and discarding the stem.
  4. We steam the vegetables or in plenty of boiling water for a couple of minutes to cook slightly but remain crisp. We strain and reserve.
  5. In a large frying pan or wok, heat the oil and brown the chopped garlic cloves for a couple of minutes over medium-high heat.
  6. Add the cayenne and vegetables and brown them for another couple of minutes, stirring from time to time.
  7. Add the quinoa and the rest of the ingredients (except the sesame seeds) and cook for another 2 minutes.
  8. Serve with sesame seeds on top (optional).
  9. We can keep it in the fridge in an airtight container for about five days.
