If you didn't know, we love Mexican food, and tacos are my weakness; that's why I've wanted to try a vegan and gluten-free version, which is simple but is just as tasty as the traditional version.

Once again, vegan cuisine has not disappointed us, and I have to tell you that it is one of the best tacos I have ever eaten; seriously, they are there to repeat, trip, or eat those that put us ahead.

We have also prepared sour cream in a vegan version, with easy-to-find ingredients, cheap and ready in 1 or 2 minutes (whatever it takes to pour them into the blender glass and beat them). It is a very light and dairy-free sauce.

We have never used tofu much in the kitchen due to lack of habit, and because we did not know how to use it, but lately, we have been experimenting with it and have discovered exciting recipes

We do not usually eat meat or fish substitutes such as tofu, tempeh or seitan in our day to day because our diet is quite simple, but we do eat them from time to time, especially when we go out to eat outside the home.

We have used red beans, corn, and tofu to fill the taco, which we have seasoned with oil, tamari (or soy sauce), Modena vinegar, and cayenne pepper (or cayenne pepper).

You can add other vegetables such as garlic, onion, broccoli, pepper, potato, carrot or whatever you have at home. You can also use other legumes.

The fundamental thing in this recipe is the tofu and the dressing, although I recommend that you try it like this because it is to die for.

Before, I always ate the tacos that I made at home with the typical wheat flour tortillas they usually sell in supermarkets. Later, I discovered the corn flour tortillas, and I loved them because they are delicious, they are healthier, gluten-free, and generally tend to have less. Additives.

They are ingredients that are often used in Mexican cuisine, and that I personally love them. They are two of my favourite fruits, I eat them almost daily, and I never get tired.

The lettuce option may seem bland, but you can't imagine how delicious these tacos are. The filling and the sauce give it a lot of flavours; the lettuce gives it a vibrant, crunchy touch.

It is an excellent alternative to salad to eat green leaves; they are rich in minerals and vitamins and have hardly any calories.

As you can see, we can enjoy a delicious vegan lettuce taco and homemade sour cream without having to complicate life in the kitchen; you only need a frying pan and a mixer.

Ingredients SCALE (1x)

  • One tablespoon of extra virgin olive oil
  • One cayenne chilli or a pinch of cayenne powder
  • One package firm tofu (275 grams / 10 ounces drained or 400 grams / 14 ounces undrained)
  • 140 grams of corn (3/4 cup)
  • 240 grams of cooked beans (1 cup)
  • 60 grams of tamari or soy sauce (1/4 cup)
  • One teaspoon balsamic or balsamic vinegar
  • Two pear tomato
  • One avocado
  • Lettuce leaves

Ingredients SCALE (2x)

  • Two tablespoons extra virgin olive oil
  • Two chilli cayenne or a pinch of cayenne powder
  • Two package firm tofu (550 grams / 20 ounces drained or 800 grams / 28 ounces undrained)
  • 280 grams of corn (1 1/2 cup)
  • 480 grams of cooked beans (2 cups)
  • 120 grams of tamari or soy sauce (1/2 cup)
  • Two teaspoons balsamic or balsamic vinegar
  • Four pear tomato
  • Two avocado
  • Lettuce leaves

Ingredients SCALE (3x)

  • Three tablespoons of extra virgin olive oil
  • Three chilli cayenne or a pinch of cayenne powder
  • Three package firm tofu (825 grams / 30 ounces drained or 1200 grams / 42 ounces undrained)
  • 420 grams of corn (2 1/4 cup)
  • 720 grams of cooked beans (3 cups)
  • 180 grams of tamari or soy sauce (3/4 cup)
  • Three teaspoons balsamic or balsamic vinegar
  • Six pear tomato
  • Three avocado
  • Lettuce leaves

Instructions

  1. In a frying pan, we add the oil, and when it is hot, we add the chopped chilli (or the cayenne powder) and the chopped tofu. With the help of a wooden spoon or spatula, we chop it until it has a consistency similar to minced meat. We leave the tofu over medium-high heat for a few minutes until it turns golden.
  2. We cast the corn (which we have previously boiled in water), cooked beans, tamari and vinegar. We stir so that all the ingredients are integrated. We leave at least 5 minutes for the tofu to take flavour.
  3. We take two lettuce leaves, put one on top of the other, add the filling, some chopped tomato and avocado pieces, add a tablespoon of sauce (see the recipe below), and we can now enjoy our vegan tacos with lettuce and homemade sour cream.
