I have liked to prepare vegetable milk at home, and I am preparing all the ones I have tried in a homemade version. 

Quinoa milk reminds me a bit of oatmeal in consistency and taste, and the best of all is that it is gluten-free, so if you are celiac or follow a gluten-free diet, you can take it without problems.

To prepare the quinoa milk, you only need water and quinoa; although I have also added dates and cinnamon, they give it a vibrant flavour and are healthy and natural ingredients. 

In general, I always sweeten vegetable milk with dates; they are healthy and much cheaper than other sweeteners such as agave or maple syrup.

You can add other spices to the milk or even add vanilla or cocoa. 

It is typical to have cow's milk for breakfast with some commercial cocoa powder (loaded with sugar and with a minimal amount of cocoa) and white sugar; in fact, I have had it for almost my entire life, but it is not a healthy option. 

You can substitute it for non-dairy milk sweetened with dates and cocoa or unsweetened carob powder. The flavour is very similar, and it is a lighter and healthier option.

I have seen several recipes in other blogs that use raw quinoa to make this milk, but I understand it cannot be consumed raw, so I preferred to cook the quinoa before mixing it with the rest of the ingredients.

To separate the pulp from the liquid, you can use gauze, a bag or cloth to make vegetable milk, although a fabric or napkin can do the trick. 

If you use a filter, it has to be very fine because if not, the milk will not be completely liquid. I use Chufamix, a device specially designed to make vegetable milk, although it is not essential (you have more information about it in the cashew milk recipe).

Quinoa is a pseudocereal that is not well known in Spain; it has not become relatively popular until recently. 

It has excellent properties and is very rich. However, if you do not like its taste or it seems too expensive, you can try oat milk or rice milk; they are also milks made from cereals and are much cheaper.

You can add more or less water to make your milk more or less consistent and light; I personally like that vegetable milk have a lot of flavour and body, so they tend to have more calories than commercial ones.

Ingredients SCALE (1x)

  • 1 cup of cooked quinoa (240 grams)
  • 3 cups of water (750 millilitres)
  • Four dates
  • 1/4 teaspoon cinnamon

Ingredients SCALE (2x)

  • 2 cup of cooked quinoa (480 grams)
  • 6 cups of water (1500 millilitres)
  • Eight dates
  • 1/2 teaspoon cinnamon

Ingredients SCALE (3x)

  • 3 cup of cooked quinoa (720 grams)
  • 9 cups of water (2250 millilitres)
  • 12 dates
  • 3/4 teaspoon cinnamon

Instructions

  1. Cook the quinoa following the directions on the package. Let it cool.
  2. Put the quinoa and water in a blender or food processor and beat until they are completely integrated.
  3. Strain the quinoa milk through cheesecloth, cloth, utensil to make vegetable milk or an excellent filter to separate the liquid from the pulp.
  4. Pour the quinoa milk into the blender again, add the dates and cinnamon, and beat again.
  5. Store the quinoa milk in an airtight bottle or container in the fridge for up to 3-4 days.
