Pumpkin has never been eaten in my house, and until recently, I did not know how to make many delicious recipes with this ingredient. 

I thought, Who used it to make vegetable purees and little else. Still, you can prepare delicious recipes like these pumpkin and chocolate pancakes, which we devour as soon as we finish taking the photos.

If you follow me on Instagram, you will know that I am making a challenge of not consuming sugar and refined sweeteners for 60 days, although I intend to continue with the habit when I have finished the challenge. 

Sugar is very harmful to our health, and it is not worth taking it when there are so many healthy alternatives that we can use. 

These pancakes have chocolate chips with sugar that I bought in the supermarket because when we made the recipe, I was not yet doing the challenge, but from now on, Who will make all the recipes on the blog with healthier sweeteners.

Our vegan pancakes inspire the recipeand the truth is that I could not say which of the two I like better. Both are made with rice and oat flour, which are healthier than wheat flour.

It is curious that in many countries, these pancakes are considered gluten-free; in our blog in Spanish, the recipe is called vegan and gluten-free pancakes, but in English, it is believed that oats are not suitable for celiacs. 

It is a controversial issue, so we prefer not to say that they are gluten-free to heal us in health, although apparently, oats affect a tiny percentage of celiacs.

I use raw pumpkin because it is more comfortable, easy and healthy, but you can also use pumpkin puree or cooked pumpkin; the result will be similar. 

As a sweetener, I have chosen maple syrup, it is delicious, and it is healthier than sugar. However, the ideal is not to consume sweeteners in our daily life, except those that are 100% natural, such as dates. 

If you can't find maple syrup or it is out of your budget, you can use another syrup, molasses, or sweetener.

If you don't want to use pumpkin, you can substitute it with banana, applesauce or any other substitute for eggs such as flax or flax seeds or chia seeds.

I make oatmeal by grinding the oats in a food processor, although you can also use a grinder or buy oatmeal. 

I prefer to use whole oats because I don't have to have two jars, one with the oats and the other with the flour, and after all, it's the same.

You can substitute chocolate chips for the chopped chocolate

The ideal is to use some chocolate that is not sweetened with sugar (there is one with delicious agave) and that the percentage of cocoa is as high as possible. 

Another option is to remove them or add chocolate syrup on top of the pancakes.

I like pancakes like this, without adding anything else, but you can add cream or any syrup or molasses on top.

With chocolate syrup or with more maple syrup on top, they have to be vice.

You can make them in a pan or on the grill, I find the pan more comfortable, but it is a matter of taste. 

You can also freeze them without problems; take them out a while before so that they thaw and reheat them in the pan or on the grill. 

Although it is difficult to freeze them because they are so delicious that they fly.

  • 1 cup of raw pumpkin (150 grams)
  • 1 cup of rice flour (150 grams)
  • 1 cup of oatmeal (120 grams)
  • Two teaspoons yeast
  • 1 1/4 cups of rice milk (300 millilitres)
  • Two tablespoons maple syrup
  • One tablespoon of coconut oil
  • One teaspoon cinnamon
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon of nutmeg
  • One clove
  • 1/2 cup of chocolate chips (90 grams)

Ingredients SCALE (2x)

  • 2 cup raw pumpkin (300 grams)
  • 2 cup of rice flour (300 grams)
  • 2 cup of oatmeal (240 grams)
  • Four teaspoons yeast
  • 2 1/2 cups of rice milk (600 millilitres)
  • Four tablespoons maple syrup
  • Two tablespoon coconut oil
  • Two teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 of a teaspoon of nutmeg
  • Two cloves
  • 1 cup of chocolate chips (180 grams)

Ingredients SCALE (3x)

  • 3 cup raw pumpkin (450 grams)
  • 3 cup of rice flour (450 grams)
  • 3 cup of oatmeal (360 grams)
  • Six teaspoons yeast
  • 3 3/4 cups of rice milk (900 millilitres)
  • Six tablespoons maple syrup
  • Three tablespoon coconut oil
  • Three teaspoon cinnamon
  • 3/8 teaspoon ground ginger
  • 3/8 of a teaspoon of nutmeg
  • Three cloves
  • 1 1/2 cup of chocolate chips (270 grams)


  1. In a bowl, mix all the dry ingredients (rice flour, oatmeal, yeast, cinnamon, ginger and nutmeg). You can make oatmeal by grinding rolled oats in a food processor or grinder.
  2. In another container, we mix the liquid ingredients (milk, maple syrup and oil that must be liquid).
  3. Add the chopped pumpkin and cloves to the liquid ingredients and beat with a mixer. Next, we add the dry ingredients to the mixture and won again.
  4. Add the chocolate chips and stir the mixture with a spoon.
  5. In a frying pan, we add a drop of oil and spread it with a paper napkin. When it is hot, add ¼ cup of the dough and leave about 2 minutes on each side. We know that we have to turn the pancake when the edges are more golden, and it is easy to turn it with the help of a spatula.
