Healthy Potato Nachos {Delicious!}

I have always loved nachos with cheese, but it is impossible to find nachos or tortillas that do not contain oil or additives and making homemade tortillas is not practical for the day today, so we suggest you replace them with baked potatoes, which are also delicious, they are healthier and straightforward to prepare.

  • On top of that, we have added the vegan cheese without fat that we shared yesterday, but if you prefer, you can use our regular vegan cheese, which is also very rich. The rest of the ingredients are optional, and you can substitute them for whatever you want.
  • We had leftovers, and we tried to reheat them in the oven, and although it is better freshly made, it was delicious. If you see that you are going to have leftovers, it is better that you only add the avocado and the coriander to what you are going to eat because they do not reheat and the rest of the ingredients.

Ingredients SCALE (1x)

  • 450 g potatoes (1 pound)
  • Vegan fat-free cheese
  • 1/2 cup of cooked or canned beans (90 g)
  • 1/4 cup diced red bell pepper (40 g)
  • 1/4 cup of corn (40 g)
  • 1/2 avocado
  • A handful of fresh coriander

Ingredients SCALE (2x)

  • 900 g potatoes (2 pounds)
  • Vegan fat-free cheese
  • 1 cup of cooked or canned beans (180 g)
  • 1/2 cup diced red pepper (80 g)
  • 1/2 cup of corn (80 g)
  • One avocado
  • A handful of fresh coriander

Ingredients SCALE (3x)

  • 1350 g potatoes (3 pounds)
  • Vegan fat-free cheese
  • 1 1/2 cup of cooked or canned beans (270 g)
  • 3/4 cup diced red bell pepper (120 g)
  • 3/4 cup corn (120 g)
  • 1 1/2 avocado
  • A handful of fresh coriander

Instructions

  1. Preheat the oven to 200ºC or 390ºF.
  2. Wash the potatoes and cut them into wedges without peeling them. Place them on a baking sheet lined with parchment paper and bake for 30 minutes.
  3. Please take out the tray, add the cheese (we added half of our vegan fat-free cheese recipe), the beans and the bell pepper, and bake for another 10 minutes. If the potatoes are not tender, leave them longer.
  4. Add the corn, chopped avocado and cilantro and serve.
