Pasta With Piquillo Peppers Sauce

Pasta with Piquillo Peppers Sauce
Today, I always make simple pasta recipes that are ready in about 15 or 20 minutes, like this pasta with Piquillo pepper sauce. You have to cook the pasta and while you prepare the sauce.

You can use any pasta, I like to use spaghetti for the whipped sauces, but it is a matter of taste. I also use gluten-free pasta, which you can find in any supermarket, at least in Spain.

On top, I have added a little dried oregano and vegan Parmesan cheese; it is lighter and healthier than traditional Parmesan.

Make the sauce you need: extra virgin olive oil (or whatever you prefer), garlic, dried tomatoes, Piquillo peppers and tomato sauce. You can also add salt if you want, although I don't add it.

Dried tomatoes are not essential, so if you can't find them or are too lazy to hydrate them, don't throw them out. Another option is to buy them already hydrated in oil; the bad thing is that they are more expensive.

If you can't find Piquillo peppers in your country (you can see what they look like in the photo below), use roasted red peppers, or you can even use raw red peppers, cut them into strips and fry them with the oil and garlic.

The Parmesan is optional, but it gives it the final touch, and it is worth doing because it is vibrant and only takes 5 minutes to prepare. You can see how the pasta looks fresh out of the pan; it also looks perfect and is delicious.

Ingredients SCALE (1x)

  • Extra virgin olive oil
  • Four cloves of garlic
  • Four dried tomatoes
  • 2/3 cup Piquillo peppers (150 g)
  • 1 cup of tomato sauce (250 g)
  • One tablespoon of oregano
  • 240 g pasta (8.5 oz)
  • Salt to taste
  • Vegan Parmesan Cheese

Ingredients SCALE (2x)

  • Extra virgin olive oil
  • Eight cloves of garlic
  • Eight dried tomatoes
  • 1 1/3 cup Piquillo peppers (300 g)
  • 2 cup of tomato sauce (500 g)
  • Two tablespoon oregano
  • 480 g pasta (17 oz)
  • Salt to taste
  • Vegan Parmesan Cheese

Ingredients SCALE (3x)

  • Extra virgin olive oil
  • 12 cloves of garlic
  • 12 dried tomatoes
  • 2 cup Piquillo peppers (450 g)
  • 3 cup of tomato sauce (750 g)
  • Three tablespoon oregano
  • 720 g pasta (25 1/2 oz)
  • Salt to taste
  • Vegan Parmesan Cheese

Instructions

  1. Cook the pasta according to the instructions on the package.
  2. Meanwhile, in a frying pan, add a drizzle of olive oil and when it is hot, add the chopped garlic. Cook over medium heat until golden brown.
  3. To hydrate dried tomatoes, you can leave them to soak overnight or leave them for 20 or 30 minutes in a bowl with hot water.
  4. In a blender, add the garlic with the oil, the dried tomatoes, the peppers and the tomato sauce. Beat until perfectly integrated.
  5. Add the sauce to the pan and the oregano, and the drained pasta and cook for about 5 minutes.
  6. Serve with a bit of oregano and Parmesan on top.
