Most people who go vegan find it most difficult to give up is dairy, among other things, because they are addictive and because of their taste, but luckily there are more and more alternatives in stores. In addition, there are many recipes that we can prepare at home.

I have always loved yoghurt, it was my dessert every day at noon and night, so at first, it took me a bit to give it up, but the effort was worth it for my health, the planet and the animals.

Now I don't have desserts often because they slow me down and make my digestion difficult, but that doesn't mean I don't enjoy sweet treats; I try to eat them for breakfast or snack.

We have two yoghurt recipes on the blog, a traditionally made soy yoghurt and a vegan coconut yoghurt made in no time. 

Some of you consume soy, and others don't; that's why we made coconut yoghurt; the problem is that young coconuts are not easy to find. 

They are also quite expensive, so we have made a new version with cashew nuts, which are somewhat more affordable and easier to find, although they are not a cheap option.

Advice:

  • We have not tried using other nuts, so we do not know if the recipe works, although you can try. If you do, we would be very grateful if you would comment on your experience.
  • When the yoghurt is freshly beaten and has not yet fermented, it does not taste very much like yoghurt, but by 12 hours, it will be perfect.
  • If you do not add probiotics, the yoghurt will not taste the same and will not have the same beneficial properties for your intestinal flora.

Ingredients SCALE (1x)

  • 2 and 2/3 cups raw and unsalted cashews (400 g)
  • 1 and 1/2 cups of water (375 ml)
  • Four tablespoons lemon juice
  • 1/4 teaspoon of salt
  • Three capsules of probiotics

Ingredients SCALE (2x)

  • 4 and 2/3 cups raw and unsalted cashews (800 g)
  • 2 and 1/2 cups of water (750 ml)
  • Eight tablespoons lemon juice
  • 1/2 teaspoon salt
  • Six probiotic capsules

Ingredients SCALE (3x)

  • 6 and 2/3 cups raw and unsalted cashews (1200 g)
  • 3 and 1/2 cups of water (1125 ml)
  • 12 tablespoons lemon juice
  • 3/4 teaspoon salt
  • Nine probiotic capsules

Instructions

  1. Let the cashews soak the night before.
  2. The next day strains them, wash them and put them in a blender with the rest of the ingredients (except for the probiotics). Beat until smooth.
  3. Pour the yoghurt into a bowl, add the content of 3 probiotic capsules (discard the container, add only the powders inside) and stir well.
  4. Cover with gauze or cloth and let it rest for at least 12 hours in a dark, dry place. After that time, you can take your yoghurt of the time or put it in the fridge for a while to be fresh and more prosperous.
