I have been away from home for a few days, and when I travel, I do not usually eat so healthy because I am not always well prepared, and I also find it difficult to avoid temptations.

Advice:

  • Instead of sweet potato, you can use potato, although the cooking time may vary because the potato is less complicated.
  • You can use any other sweetener instead of maple syrup if you don't want the soup to have that sweetish touch so characteristic of curries, omit this ingredient.
  • If you don't have vegetable broth, you can use water.
  • You can add more or less liquid depending on the texture you are looking for.

Ingredients SCALE (1x)

  • Two tablespoons of extra virgin olive oil
  • Four cloves of garlic
  • 1/2 onion
  • One can of coconut milk (400 ml)
  • 2 cups of vegetable broth (500 ml)
  • One tablespoon maple syrup
  • 1/2 teaspoon ground ginger
  • Two teaspoons curry powder
  • 1/2 teaspoon turmeric powder
  • 1 cup diced sweet potato (265 g)
  • Salt to taste
  • Toppings: tofu, red cabbage, broccoli and red pepper

Ingredients SCALE (2x)

  • Four tablespoons of extra virgin olive oil
  • Eight cloves of garlic
  • One onion
  • Two can of coconut milk (800 ml)
  • 4 cups of vegetable broth (1000 ml)
  • Two tablespoon maple syrup
  • One teaspoon ground ginger
  • Four teaspoons curry powder
  • One teaspoon turmeric powder
  • 2 cup diced sweet potato (530 g)
  • Salt to taste
  • Toppings: tofu, red cabbage, broccoli and red pepper

Ingredients SCALE (3x)

  • Six tablespoons of extra virgin olive oil
  • 12 cloves of garlic
  • 1 1/2 onion
  • Three can of coconut milk (1200 ml)
  • 6 cups of vegetable broth (1500 ml)
  • Three tablespoon maple syrup
  • 1 1/2 teaspoon ground ginger
  • Six teaspoons curry powder
  • 1 1/2 teaspoon turmeric powder
  • 3 cup diced sweet potato (795 g)
  • Salt to taste
  • Toppings: tofu, red cabbage, broccoli and red pepper

Instructions

  1. In a deep skillet or saucepan, add the oil. When hot, add the garlic and onion until golden brown.
  2. Add the coconut milk and the vegetable broth and turn the heat to high. When they come to a boil, turn down to medium-high heat and add the rest. Cook until the sweet potato is tender.
  3. When the soup is ready, please put it in a blender and beat it until creamy.
  4. Serve with your favourite toppings. I have added raw vegetables (red cabbage, broccoli and red pepper) and tofu that I have prepared as in our Caesar salad recipe, although you can skip it if you don't want to complicate your life.
