Many of you ask me what to do with the leftovers or the pulp of the vegetable milk. The truth is that Who can prepare many decadent recipes such as cookies, vegetable cheeses, muffins and a long etcetera. Still, my favourite recipe is truffles, they are easy to prepare, and they taste spectacular. 

These chocolate and hazelnut truffles are made with the remains of the hazelnut and cocoa milk that we published on the blog, but you can use the pulp of other plant milk without problems.

This recipe is a healthy and light version of the well-known Ferrero Rocher. If you want, you can put a whole hazelnut inside to make them look even more alike. 

I have used unsweetened cocoa powder, but you can substitute it for carob powder, which is healthier.

You can also use other nuts such as walnuts or almonds and change the sweeteners for others, as long as they are natural.

To make the recipe, I have used dates and a tablespoon of maple syrup to bind better, but you can use any ingredient as long as you can make the balls.

Be careful that they are not too sticky and soft or, on the contrary, so dry that it is impossible to join the dough.

If they are very sticky, you can do two things, add more solid ingredients such as cocoa or dates or put the dough in the freezer for 15 or 20 minutes before making the balls. Then, if it's too dry, add more maple syrup or any other molasses or syrup.

Ingredients SCALE (1x)

  • 1 cup of hazelnut pulp or leftover hazelnut milk (225 grams)
  • 1/4 cup unsweetened cocoa powder or carob powder (20 grams)
  • 1 cup of dates (160 grams)
  • One tablespoon maple syrup
  • 1/3 cup of hazelnuts (50 grams)

Ingredients SCALE (2x)

  • 2 cup of hazelnut pulp or leftover hazelnut milk (450 grams)
  • 1/2 cup unsweetened cocoa powder or carob powder (40 grams)
  • 2 cups of dates (320 grams)
  • Two tablespoon maple syrup
  • 2/3 cup of hazelnuts (100 grams)

Ingredients SCALE (3x)

  • 3 cup of hazelnut pulp or leftover hazelnut milk (675 grams)
  • 3/4 cup unsweetened cocoa powder or carob powder (60 grams)
  • 3 cups of dates (480 grams)
  • Three tablespoon maple syrup
  • 1 cup of hazelnuts (150 grams)

Instructions

  1. Put all the ingredients except the hazelnuts in a food processor or blender and beat until well combined. Put the mixture in a bowl.
  2. Chop the hazelnuts with a knife and add them to the bowl. Stir with the help of a spoon so that the hazelnuts are distributed.
  3. Roll the mixture into balls. If they stick to your hands, you can wet them with a bit of water.
  4. Store them in the fridge in an airtight container.
