Banana Pudding {5 Minutes}

I think this banana pudding is one of the recipes that I have liked the most of all the ones we have made for the blog, especially if I eat it with many fresh raspberries on top because the contrast of flavours is brutal. 

You can also use frozen raspberries and leave them for a while at room temperature until they thaw or any other red fruit such as strawberries, blackberries or blueberries.

Lately, raw or raw vegan desserts call my attention; they are healthier, lighter, and generally cost my body less to digest, so I decided to buy a powerful food processor because it cost me about 10 euros was not for much.

With the Vitamix, you can also do a fix, but it is not the same.

To make this pudding, you only need four ingredients: raw cashews, bananas, dates and your favourite vegetable milk (I used almond milk). 

On top, I like to add chopped cashews and raspberries, but it is also delicious with any other dried fruit, with dates or with natural syrups (maple is my favourite).

If you like chocolate a lot, you can add a little unsweetened cocoa powder (better if it is raw), although you may have to add more dates.

It is a very healthy dessert, it is delicious, and it is prepared in 5 minutes; you have to put all the ingredients in the processor (or in the blender) and beat until you get a perfect consistency.

To make it more creamy, I like to use two frozen bananas and two ordinary bananas, but if you want to eat this delicious dessert and you don't have frozen bananas on hand, don't worry; you can use non-frozen bananas

If it is not too creamy, you can add more bananas or more cashews.

If you want it to have a smoother consistency, you can soak the cashews the night before, but it is unnecessary; in fact, I did not. If your processor or mixer is not very powerful, it may be a good idea to soak them because it will cost much less to beat them.

If you cannot find dates or are very expensive in your country, you can use any other natural sweetener. You can also try using different nuts such as almonds; although I recommend that they be raw and unsalted nuts, they are much healthier.

Ingredients SCALE (1x)

  • 2 cups raw cashews
  • Two frozen bananas
  • Two normal bananas
  • 8 Deglet Nour dates or 4 Medjool dates
  • 3/4 cup of almond milk (185 ml)
  • Chopped raspberries and cashews for garnish (optional)

Ingredients SCALE (2x)

  • 4 cups raw cashews
  • Four frozen bananas
  • Four normal bananas
  • 16 Deglet Nour dates or 4 Medjool dates
  • 1 1/2 cup of almond milk (370 ml)
  • Chopped raspberries and cashews for garnish (optional)

Ingredients SCALE (3x)

  • 6 cups raw cashews
  • Six frozen bananas
  • Six normal bananas
  • 24 Deglet Nour dates or 4 Medjool dates
  • 2 1/4 cup of almond milk (555 ml)
  • Chopped raspberries and cashews for garnish (optional)


  1. The night before, you can soak the cashews so that it costs less to beat them and so that the pudding is a smoother consistency. It is an optional step; in fact, I did not do it.
  2. Put all the ingredients in a food processor or blender and beat until you get the desired consistency. Chill in the fridge for at least 2 hours.
  3. Garnish with fresh raspberries and chopped cashews.
