Today I want to share one of the recipes in the book, these delicious Healthy And Rich Vegan Apple Custard.

The custard was one of my favourite desserts when I was not vegan, and the truth is that this version is outrageous; it also has a delicious apple flavour and is a straightforward recipe to make. 

They are ready in about 15 or 20 minutes, although you have to wait for them to cool down, which is the most challenging part because they smell so good and look great, so it's hard to resist.

My favourite apples are Reineta because they are more acidic than other varieties, but you can use those you like the most. I peeled them because they were not organic and because I also think that the recipe comes out better if they are peeled, but it is optional.

Ingredients SCALE (1x)

  • Two apples
  • The juice of half a lemon
  • Four tablespoons agave syrup or coconut sugar
  • 4 cups of oat milk (1 litre)
  • One piece of a vanilla bean (about 2 centimetres or 1 inch)
  • One large or two small cinnamon sticks
  • 1 or 2 teaspoons of agar agar powder

Ingredients SCALE (2x)

  • Four apples
  • The juice of half a lemon
  • Eight tablespoons agave syrup or coconut sugar
  • 8 cups of oat milk (2 litres)
  • Two pieces of a vanilla bean (about 4 centimetres or 2 inches)
  • Two large or two small cinnamon sticks
  • 2 or 2 teaspoons of agar agar powder

Ingredients SCALE (3x)

  • Six apples
  • The juice of half a lemon
  • 12 tablespoons agave syrup or coconut sugar
  • 12 cups of oat milk (3 litres)
  • Three pieces of a vanilla bean (about 6 centimetres or 3 inches)
  • Three large or two small cinnamon sticks
  • 3 or 2 teaspoons of agar agar powder

Instructions

  1. Peel the apples and chop them.
  2. In a saucepan, add the apples, lemon juice and agave syrup or coconut sugar (or whatever sweetener you want). Cook for about 5 minutes so that the apple falls apart and softens.
  3. Add the milk, vanilla and cinnamon and turn the heat to the highest. When it comes to a boil, lower the heat and cook for about 5 minutes.
  4. Add the agar-agar powder and cook for another 5 minutes.
  5. Remove the cinnamon stick, beat the Healthy And Rich Vegan Apple Custard and serve in individual bowls. If you do not have a perfect texture when cooling, you can beat them again before serving.
