Aubergines With Cane Honey

I have always loved fried aubergines, although I had not tried them with cane syrup until a few years ago. The result is spectacular!

The problem is that this typical Andalusian dish is not exactly healthy or light. They are aubergines battered with refined wheat flour and fried, which is why I like this recipe so much. I have to admit that the original tastes better, but they are also delicious.

You only need five ingredients: aubergine, salt (optional), flour (I used buckwheat flour, but you can use whatever you want), extra virgin olive oil and cane syrup, nothing more! It is effortless and much lighter because the aubergines are baked.

Cane Honey
Cane honey is vegan and can be an ideal substitute for traditional love; However, I prefer maple syrup. It is vibrant; I wanted to release my new mandolin (which you can find on the Amazon website). The truth is that I never saw the moment.

It is convenient, easy to use, and since all the slices are the same thickness, they cook more evenly.

It is not essential to use a mandolin; you can cut the eggplant into slices, although it is very comfortable and makes all the vegetables done equally and simultaneously.

I added a drizzle of olive oil to them, just enough so that they weren't too dry, but they didn't have much fat, although if you want, you can add more oil.

Ingredients SCALE (1x)

  • One aubergine
  • Sea salt (optional)
  • 3/4 cup of buckwheat flour (120 g)
  • Extra virgin olive oil
  • Cane honey

Ingredients SCALE (2x)

  • Two eggplant
  • Sea salt (optional)
  • 1 1/2 cup of buckwheat flour (240 g)
  • Extra virgin olive oil
  • Cane honey

Ingredients SCALE (3x)

  • Three eggplant
  • Sea salt (optional)
  • 2 1/4 cup of buckwheat flour (360 g)
  • Extra virgin olive oil
  • Cane honey

Instructions

  1. Preheat the oven to 200ºC or 390ºF.
  2. Cut the eggplant into 1/8-inch thick slices with a mandolin or knife.
  3. Put salted water in a bowl and add the eggplant slices. Roll them with the flour.
  4. Put the slices on a baking sheet (I always put the greaseproof paper on it to prevent the food from sticking, but optional). Add sea salt to taste and a drizzle of oil. Bake for about 20 minutes or until done. The time may vary depending on the thickness of the slices and your oven.
  5. Serve with cane honey on top.
